A Delicious Side Dish: How to Make Fragrant Perilla Kimchi
We’ve made delicious perilla kimchi using aromatic perilla leaves! It’s the perfect side dish to whet your appetite when you have nothing else to serve. It’s simple to make and incredibly satisfying!
Main Ingredients- 10 perilla leaves
Seasoning Ingredients- 2 Tbsp soy sauce
- 1/2 Tbsp red pepper flakes
- 1/3 Tbsp minced garlic
- 1 Tbsp sesame oil
- 20g green onion (finely chopped)
- 15g carrot (finely minced)
- 35g onion (finely minced)
- 1 cheongyang pepper (finely chopped)
- 1/2 Tbsp toasted sesame seeds
- 2 Tbsp soy sauce
- 1/2 Tbsp red pepper flakes
- 1/3 Tbsp minced garlic
- 1 Tbsp sesame oil
- 20g green onion (finely chopped)
- 15g carrot (finely minced)
- 35g onion (finely minced)
- 1 cheongyang pepper (finely chopped)
- 1/2 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, wash the perilla leaves thoroughly under running water. After washing, it’s important to pat them dry with paper towels or drain them completely in a colander. If water remains, the kimchi can become bland or spoil quickly.
Step 2
Neatly trim the edges of the perilla leaves. Cutting off about 1.5 to 2 cm of the tough stem part with scissors will help the seasoning to be absorbed well and make them easier to eat.
Step 3
Wash the green onions, carrots, onions, and cheongyang peppers for the seasoning under running water and remove excess moisture. It’s best to mince all the prepared vegetables into similarly sized small pieces to ensure the seasoning is evenly spread and provides a good texture.
Step 4
In a bowl, combine 2 Tbsp soy sauce, 1/2 Tbsp red pepper flakes, 1/3 Tbsp minced garlic, 1 Tbsp sesame oil, and 1/2 Tbsp toasted sesame seeds, and mix them well first. Once the seasoning ingredients are partially combined, add the finely minced green onions, carrots, onions, and cheongyang peppers. Mix everything thoroughly until well combined to create a delicious seasoning paste.
Step 5
Place one perilla leaf on a wide plate or container. Take about 1/3 Tbsp of the prepared seasoning and spread it thinly and evenly over the entire surface of the perilla leaf. It’s crucial to spread the seasoning evenly without clumping.
Step 6
Place another perilla leaf on top of the seasoned leaf and repeat the process of spreading the seasoning evenly. Continue this step until all the perilla leaves are used up to complete the delicious perilla kimchi. Avoid making the layers too thick, as this is key to allowing the seasoning to penetrate well.
