Main Ingredients- 50g Baekseon oyster mushrooms
- 50g Yellow oyster mushrooms
- 50g Gonji No. 7 oyster mushrooms
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/2 onion
Mushroom Stir-fry Seasoning- Cooking oil, as needed
- Salt, to taste
- Black pepper, to taste
- 1/2 Tbsp oyster sauce
Mustard Dressing- 1.5 Tbsp prepared mustard (yeongeonja)
- 2 Tbsp oligosaccharide
- 0.5 Tbsp sugar
- 2 Tbsp vinegar
- Cooking oil, as needed
- Salt, to taste
- Black pepper, to taste
- 1/2 Tbsp oyster sauce

- 2 Tbsp oligosaccharide

Cooking Instructions
Step 1
First, prepare the three types of Korean mushrooms (Baekseon, Sunjeong, and Gonji No. 7 oyster mushrooms) along with fresh bell peppers and onion for the dish. Wash all ingredients thoroughly and ensure they are drained of excess water.
Step 2
Before cooking, trim off any dirt or the tough base from the oyster mushrooms. Then, separate the mushrooms into bite-sized pieces by hand. Avoid cutting them too small, as this can diminish the texture. Aim for pieces that are easy to eat.
Step 3
Remove the seeds from the red and yellow bell peppers. Slice them thinly into strips along with the fresh onion. These julienned vegetables will add a delightful crunch to the dish when stir-fried with the mushrooms.
Step 4
Heat a frying pan over medium-high heat and add a suitable amount of cooking oil. Add the prepared oyster mushrooms and begin to stir-fry. Once the mushrooms start releasing their moisture, add salt, black pepper, and oyster sauce. Continue to stir-fry until the moisture has evaporated and the mushrooms are lightly browned to enhance their flavor.
Step 5
Once the mushrooms are nicely stir-fried, add the julienned onion and bell peppers to the pan. Stir-fry over high heat for just about 1-2 minutes, or until the vegetables are slightly tender but still crisp. Be careful not to overcook them to the point of becoming mushy.
Step 6
Transfer the stir-fried mushrooms and vegetables to a large bowl and let them cool slightly. Adding the dressing while the mushrooms are hot can result in a raw flavor. Once the mixture has cooled down a bit, generously pour the pre-made sweet and tangy mustard dressing over it. Gently toss everything together until the dressing evenly coats all the ingredients.
