Cooking Instructions

Step 1

Let’s begin making this wonderfully fluffy and soft Italian-style Spinach Frittata! ♬♪

Step 2

First, prepare your fresh spinach. Separate the leaves and cut them into roughly 5cm pieces.

Step 3

Rinse the spinach thoroughly 3-4 times under running water to remove any dirt or grit. Gently pat it dry.

Step 4

Peel the onion and slice it thinly into strips.

Step 5

Cut the bacon into bite-sized pieces, about 0.5cm thick. Avoid cutting them too thinly, or they might break apart.

Step 6

Now, heat a pan and sauté the bacon and onion first to build flavor. Spinach cooks quickly, so we’ll add it a bit later.

Step 7

Bacon is naturally salty, so add just a small pinch of salt and pepper while sautéing. The rendered bacon fat will wonderfully flavor the onions.

Step 8

Once the onions become translucent and start to turn a light brown, add the spinach. Sauté just until the spinach wilts slightly. Be careful not to overcook it, or it will lose its fresh texture.

Step 9

Transfer the sautéed vegetables to a separate bowl to cool down slightly. It’s important to let them cool before mixing them into the frittata batter.

Step 10

In a bowl, crack the 5 eggs. Add the 150g of milk, 1 tsp salt, and a pinch of pepper. Whisk gently, avoiding creating too much foam. For an even smoother frittata, consider straining the egg mixture through a sieve.

Step 11

(Optional) Tear the bread crusts you’ve stored in the freezer into small pieces and add them to the egg mixture. The bread will soak up the egg, making the frittata more moist and filling.

Step 12

Add the cooled sautéed bacon, onion, and spinach mixture to the egg batter.

Step 13

Gently stir with a spatula or chopsticks to combine all the ingredients evenly with the egg mixture. Ensure there are no clumps.

Step 14

Heat a non-stick frying pan over medium-low heat and coat it with about two drizzles of cooking oil. Carefully pour the prepared frittata mixture into the hot pan.

Step 15

Maintain medium-low heat. Use a chopstick to gently stir the edges of the frittata as it cooks, ensuring the egg cooks evenly throughout. This method helps it cook through softly.

Step 16

When the egg is fluffy and the top is just slightly unset, you can serve it as is. However, the next step will add an extra layer of deliciousness.

Step 17

Sprinkle your desired amount of shredded mozzarella cheese evenly over the top of the frittata. The melting cheese will add a wonderful savory flavor.

Step 18

Cover the pan with a lid and cook over very low heat until the cheese is completely melted and bubbly. Be mindful of the heat to prevent burning the cheese. About 5 minutes should be sufficient.

Step 19

And there you have it! A beautiful Spinach Frittata, made without an oven. Enjoy this fluffy, savory, and tender frittata for a truly special meal.
