Ingredients

  • 5 Tbsp dried jujubes
  • 5 Tbsp sugar (or substitute with 2 Tbsp sugar + 2 Tbsp stevia)
  • 3 Tbsp Greek yogurt
  • 100ml water

Cooking Instructions

We use dried jujubes for their rich aroma and convenient preparation. Pre-cut dried jujubes are especially helpful for extracting the essence.

In a wide pot, combine the dried jujubes, sugar (or stevia alternative sweetener), and 100ml of water. Stir well until the sugar is completely dissolved.

Bring the mixture to a gentle simmer over medium-low heat. Cook until the mixture slightly thickens, resembling a jam, when you scrape the bottom of the pot (approx. 10-15 minutes). A slight reddish hue appears when you scrape the bottom.

Strain the cooked jujube and sugar mixture through a fine-mesh sieve. Press down firmly with a spoon or spatula to extract only the concentrated jujube essence.

The consistency of the jujube essence is slightly thicker than water. For this recipe, Greek yogurt is recommended due to its lower moisture content.

In a bowl, combine 3 tablespoons of the prepared jujube essence with 3 tablespoons of Greek yogurt. Mix gently until smooth. Aim for a 1:1 ratio of jujube essence to yogurt.

Top the finished jujube yogurt with the remaining dried jujube pulp for an appealing presentation and added texture. (The leftover dried jujube pulp can be rehydrated, mixed with ginger syrup, and simmered to make a warm tea.)
