Cooking Instructions
Step 1
First, thoroughly wash the glass jar or container you’ll use to store the basil pesto. Sterilize it by boiling in water or wipe it dry with a clean cloth, ensuring it’s completely dry. This step helps keep your pesto fresher for longer.

Wash the fresh basil leaves and pat them dry. Accurately weigh out 60g of basil leaves and place them into a blender or food processor.

Toast the 35g of walnuts in a dry pan over low heat without any oil. The key is to toast them until their moisture evaporates and they release a nutty aroma. Let the toasted walnuts cool slightly before adding them to the blender. This process enhances their flavor.

Add the 12g of garlic (about 3-4 cloves) for aroma and 2g of salt to balance the flavors into the blender.

Carefully measure and add 40g of Parmesan cheese (grated) for deep flavor and 130ml of extra virgin olive oil to the blender. The olive oil is crucial for the pesto’s consistency and smoothness, so measure it precisely.

Now, all the ingredients are ready! Securely close the blender lid and blend until the ingredients are finely and smoothly incorporated into a pesto, with no large chunks remaining. Periodically stop the blender and scrape down the sides with a spatula to ensure even mixing. Continue blending until you achieve your desired consistency.
