The process is surprisingly simple, and once you taste it, you’ll find yourself making this delectable grilled deodeok frequently! Deodeok Preparation

  • 200g prepared deodeok (pre-peeled makes it easier)
  • 1 stalk scallion (for garnish)

Deodeok Grill Marinade

  • 1 Tbsp soy sauce for seasoning (Mat-ganjang)
  • 1/2 Tbsp red pepper flakes (Gochugaru)
  • 1.5 Tbsp red pepper paste (Gochujang)
  • 1 Tbsp allulose (or corn syrup/honey)
  • 1 Tbsp plum extract (Mae-sil cheong)
  • 1 Tbsp minced garlic
  • 2 Tbsp sesame oil (for finishing)
  • A pinch of toasted sesame seeds (for finishing)

Pre-seasoning Deodeok (Oil Marinade)

  • 1 Tbsp soy sauce for seasoning (Mat-ganjang)
  • 1 Tbsp sesame oil
  • 1 Tbsp cooking wine (Mirin)

Cooking Instructions

Step 1

First, prepare all the ingredients for your grilled deodeok. Using pre-peeled and prepared deodeok will make the cooking process much more convenient. Wash the scallions thoroughly, as they will be used as a garnish at the end.

Slice the prepared deodeok lengthwise into pieces about 0.5 cm thick. Then, gently pound the deodeok along its natural grain using the back of a knife or a meat tenderizer. Be careful not to mash it too much, as this can make it mushy; aim to lightly tenderize the fibers. This step helps the marinade penetrate better and results in a softer texture.

In a bowl, combine the pounded deodeok with the ‘Pre-seasoning Deodeok (Oil Marinade)’ ingredients: 1 Tbsp soy sauce for seasoning, 1 Tbsp sesame oil, and 1 Tbsp cooking wine. Gently massage the marinade into the deodeok to coat evenly. This ‘oil marinating’ step helps reduce any bitterness, enhances the deodeok’s natural flavor, and ensures a moist and tender result after grilling. Let it marinate for about 10 minutes for the flavors to meld.

While the deodeok is marinating, prepare the ‘Deodeok Grill Marinade’. In a small bowl, mix together 1 Tbsp soy sauce for seasoning, 1/2 Tbsp red pepper flakes, 1.5 Tbsp red pepper paste, 1 Tbsp allulose, 1 Tbsp plum extract, and 1 Tbsp minced garlic. *Do not add the 2 Tbsp sesame oil or sesame seeds yet*; these are for finishing. Having the marinade ready in advance will streamline the cooking process.

Place the deodeok (after its 10-minute oil marination) into a non-stick skillet over low heat. You can add a tiny bit of oil if your pan isn’t well-seasoned, or cook it dry. Lightly grill the deodeok on both sides until it just begins to turn golden, being careful not to burn it. This initial grilling helps to bring out its nutty aroma.

Once the deodeok pieces show a slightly deeper color from the initial grilling, generously brush the prepared ‘Deodeok Grill Marinade’ evenly over all surfaces. Using a pastry brush can help ensure an even coating. Make sure to cover each piece thoroughly.

Crucially, maintain low heat throughout this stage. Flip the deodeok frequently to ensure the marinade cooks evenly and caramelizes without burning. As the sauce thickens and adheres to the deodeok, you can slightly adjust the heat if needed, but low and slow is key.

When the deodeok becomes tender and the marinade has nicely coated and reduced, it’s time to add the finishing touches. Drizzle 1 Tbsp of sesame oil over the deodeok on each side. The aroma of the sesame oil will beautifully complement the deodeok’s flavor.
