  • 200cc Olive Oil (Extra virgin recommended)
  • 20 whole cloves Garlic (Using with skins on enhances flavor)
  • 20 large Shrimp (Peeled, deveined, and patted dry)
  • 2 Serrano Peppers (or other small hot chili peppers)
  • 2 Red Chili Peppers (for color and mild flavor)
  • 1 Baguette (sliced for dipping)

First, let’s prepare all the fresh ingredients for our gambas. For the shrimp, after thawing them, pat them thoroughly dry with paper towels. Lightly season with salt and pepper to enhance their flavor.

Thinly slice the whole garlic cloves. Slice the Serrano and red chili peppers into thin rounds. You can remove the seeds from the chili peppers if you prefer a milder heat.

Now, pour a generous amount of olive oil into your pan. Gently heat the oil over low heat (around medium-low on an induction cooktop). You want the oil to warm up slowly, allowing the garlic to infuse its flavor without burning.

Add the sliced garlic to the warmed olive oil. Let the garlic simmer and gently fry in the oil, allowing its aroma to fully release into the oil. Cook until the garlic turns a light golden brown. This process is key to developing the rich flavor.

Once the garlic is fragrant and lightly golden, add the seasoned shrimp to the pan. Cook the shrimp for about 2-3 minutes, stirring gently, until they turn pink and are cooked through. Be careful not to overcook the shrimp, as they can become tough.

When the shrimp are almost cooked, add the sliced Serrano and red chili peppers to the pan. Cook for another minute or so, allowing the peppers to soften slightly and add a touch of color and mild heat to the dish.
