I received some fresh zucchini leaves, home-grown by a neighbor at their weekend farm. They look so vibrant and healthy!

It’s important to remove the tough fibrous strings from the zucchini leaves. Gently bend the stem 2-3 times and peel away the fibrous strings. As you can see in the picture, bend the stem area and peel off the ‘skin’.

Look at how easily those tough fibers came off the stems! This step ensures a tender texture for the zucchini leaves.

Fill a pot with plenty of water and bring it to a boil. Add 1 teaspoon of salt to the boiling water. Adding salt raises the boiling point, allowing the zucchini leaves to blanch at a higher temperature, which also helps maintain their vibrant green color. Add the zucchini leaves and blanch for 2-3 minutes.

Finely mince the green onion and red chili pepper for the seasoning. These will add both color and flavor.

Immediately rinse the blanched zucchini leaves under cold water to cool them down. Then, gently squeeze out as much water as possible with both hands. Thoroughly draining the water prevents the dish from becoming watery and ensures the seasoning adheres well. Cut the drained zucchini leaves into three equal portions for easier handling. If they are too long, the leaves might slide off your chopsticks when eating. Gently loosen the cut zucchini leaves.

Arrange the zucchini leaves in a mixing bowl. Instead of using a separate bowl for the seasoning, it’s best to add the seasonings directly to the bowl with the zucchini leaves. Push the zucchini leaves to one side to create space, then add all the seasoning ingredients. Mix everything together thoroughly; this method helps the seasoning distribute evenly, resulting in a more flavorful dish. The seasoning includes: 1/2 Tbsp gochujang, 1/2 Tbsp doenjang, 1/2 Tbsp minced garlic, and 1/2 Tbsp anchovy extract. Finish with a drizzle of sesame oil and perilla oil. Mix these well.
