Main Ingredients

  • 1/2 head Lettuce
  • 1 Cucumber
  • 15 Shrimp
  • 5 sticks imitation crab meat
  • 1 bunch Coriander
  • 100g Bulgogi or Stir-fried Pork (Jeyuk Bokkeum)
  • 1 Avocado
  • Pineapple or pickled radish wrappers
  • Rice paper wrappers

Sauce

  • Chili sauce

Cooking Instructions

Step 1

First, prepare your fresh vegetables. Coarsely julienne the lettuce into bite-sized pieces and slice the cucumber to a similar thickness. Briefly boil the shrimp until cooked, then rinse under cold water, drain, and halve them. Wash the coriander thoroughly, pat it dry, and finely chop it – this herb is key to the fragrant aroma!

Step 1

Step 2

Now, let’s assemble the fresh spring rolls using the rice paper. Lightly dip a rice paper sheet in warm water until it becomes pliable. Arrange your prepared ingredients on top: place the shrimp, lettuce, halved pickled radish wrappers (if using), cucumber, creamy avocado, imitation crab meat, and a generous amount of fragrant coriander.

Step 2

Step 3

Once all the fillings are in place, it’s time to roll. Fold the bottom edge of the rice paper up and over the fillings. Then, fold in the left and right sides. Finally, tightly roll the spring roll forward to enclose everything neatly. If using pickled radish wrappers, you can place one on the rice paper before adding the other fillings for an extra layer of flavor.

Step 3

Step 4

Feel free to incorporate other ingredients from your refrigerator. In this recipe, we’ve added a special touch by using stir-fried pork (Jeyuk Bokkeum) that was already in the fridge. Stir-fry the Jeyuk Bokkeum in a preheated pan with a little oil until nicely cooked and ready to be added to the rolls.

Step 4

Step 5

Adding the prepared Jeyuk Bokkeum to your spring rolls creates a delightful sweet and spicy flavor profile, making the meal even more satisfying. Dip your rolls in the chili sauce for an extra kick of spiciness. Savor this unique combination of fresh vegetables, the aromatic coriander, and the savory Jeyuk Bokkeum!
