Zucchini fritters, with their delightful crispness, are a universally loved dish! When you add nutritious curry powder, even children who are picky eaters will be captivated, wondering, ‘What is this delicious taste?’. The added benefits of curry, known to be particularly good for growing girls, will surely win over mothers’ hearts. Made with seasonal autumn Korean zucchini, these curry zucchini fritters boast a deep flavor. Shall we make them right away?
Main Ingredients- Zucchini (Korean zucchini or regular zucchini) 1
- Curry powder 2 Tbsp
- Pancake mix 1 Tbsp
- Cooking oil, generous amount
- Cheongyang chili pepper (optional, for added spiciness)
Cooking Instructions
Step 1
Tip: If Korean zucchini is unavailable, you can easily make delicious fritters using regular zucchini. Choose your preferred type of zucchini based on your taste.
Step 2
Wash the zucchini thoroughly, pat it dry, and then slice it into thick pieces, about 1 cm or more. If sliced too thinly, they can easily fall apart during cooking. Thicker slices ensure a satisfying crunch and enhance the overall flavor.
Step 3
In a bowl, mix 1 Tbsp of pancake mix with 2 Tbsp of curry powder until well combined. Add the sliced zucchini and gently toss to coat both sides evenly with the curry powder mixture. Ensuring the curry powder adheres well will bring out the flavor when cooked.
Step 4
In a separate bowl, crack and whisk 2 eggs. Once the egg mixture is ready, dip the curry-coated zucchini slices into the egg wash, ensuring both sides are lightly coated. The egg coating will add a delightful crispiness when fried.
Step 5
Heat a pan over medium heat and add a generous amount of cooking oil. Place the egg-coated zucchini slices in the hot oil and fry until golden brown on both sides. Cooking over high heat can burn the outside while leaving the inside undercooked, so medium heat is recommended for slow and even cooking. Add more oil as needed to achieve an extra crispy texture.
Step 6
Arrange the well-cooked curry zucchini fritters attractively on a plate. For a hint of spice, finely chop a Cheongyang chili pepper and sprinkle it over the fritters as a garnish. The mild spiciness will cut through any richness. For added visual appeal and flavor, you can also sprinkle black sesame seeds or regular sesame seeds. Enjoy these fritters immediately while they are warm to savor their savory and fragrant taste.
