I made french fries, which my eldest son loves for ‘no reason’! Honestly, I don’t really get the appeal of fries, but when my son exclaims ‘So delicious!’ every time he eats them, I sometimes wonder if it’s true. It really makes me realize how different everyone’s tastes are! So, I decided to make them a bit differently by adding curry seasoning to create curry french fries. This taste is so good, it even makes people like me, who aren’t big fans of fries, love them! Maybe it’s because I like curry? The subtle curry aroma seems to have a magic that makes you want to keep eating them. These curry french fries will make even picky eaters enjoy them! Ingredients
  • 9 potatoes (medium-sized)
  • 1 tsp salt

Curry Seasoning
  • 1 Tbsp olive oil
  • 1 Tbsp coconut oil (or other vegetable oil)
  • 1 Tbsp curry powder
  • Pinch of dried parsley (optional, for garnish)

Cooking Instructions

Step 1

Wash the potatoes thoroughly. You can peel them or leave the skin on, depending on your preference. Cut them into your desired shape. For a crispy exterior, cutting them into sticks about 0.7-1cm thick or into wedges works well. Using a fluted knife (‘muk-kal’ in Korean) can create a decorative edge, but a regular knife is perfectly fine too.

Step 2

Soak the cut potatoes in cold water for about 10 minutes to remove excess starch. This step helps make the fries crispier. Drain the potatoes and then briefly boil them in simmering water for about 3-5 minutes. Be careful not to overcook them, as they might fall apart during frying. They should be slightly tender when pierced with a fork.

Step 3

Drain the par-cooked potatoes in a colander and let them dry completely. Pat them dry with paper towels or a clean kitchen towel. Removing as much moisture as possible will prevent oil splattering and ensure a crispier finish.

Step 4

In a large bowl, combine the dried potatoes with all the curry seasoning ingredients: olive oil, coconut oil, curry powder, and salt. Gently toss everything together until the potatoes are evenly coated with the seasoning. Arrange the seasoned potatoes in a single layer in your air fryer basket, ensuring they don’t overlap. Air fry at 180°C (350°F) for 15-20 minutes, flipping them halfway through, until they are golden brown and crispy. If using a conventional oven, preheat to 200°C (400°F) and bake for 25-30 minutes.

Step 5

Transfer the perfectly cooked curry french fries to a serving plate or bowl. If desired, sprinkle a pinch of dried parsley on top for a touch of color and extra fragrance. These fries are best enjoyed immediately while they are warm. Serve them with your favorite dipping sauces like ketchup!
