Main Ingredients
  • 2 medium carrots (approx. 400g)
  • 5g fresh dill (about a handful)

Carrot Brining Ingredients
  • 1 tsp salt
  • 1 tsp sugar

Tangy Dressing Ingredients
  • 2 Tbsp olive oil
  • 2 Tbsp whole grain mustard
  • 1 Tbsp honey
  • 1 tsp sugar

Cooking Instructions

Step 1

Thoroughly wash 2 medium carrots (about 400g). Using a julienne peeler or grater, thinly slice the carrots into approximately 15cm long strands. Aim for thin, even strips.

Step 2

In a bowl, combine the julienned carrots with 1 teaspoon of salt and 1 teaspoon of sugar. Gently mix with your hands and let it sit for about 20 minutes. This process will draw out excess moisture from the carrots, softening them slightly.

Step 3

While the carrots are brining, cut a fresh lemon in half and squeeze out the juice. You’ll need about 2 tablespoons of lemon juice for the dressing.

Step 4

Finely chop about 15cm of fresh dill sprigs. Rinse and pat dry the dill before chopping to ensure maximum freshness and flavor.

Step 5

After 20 minutes, take the brined carrots and firmly squeeze out any excess liquid with your hands. This is a crucial step to prevent the rapé from becoming watery and to maintain a pleasant texture.

Step 6

In a clean bowl, combine the squeezed carrots with the chopped dill, 2 tablespoons of olive oil, 2 tablespoons of whole grain mustard, 2 tablespoons of lemon juice, 1 tablespoon of honey, and 1 teaspoon of sugar. Toss everything together gently until well combined. Your fragrant and delicious carrot rapé is now ready to be enjoyed!
