Cooking the Pasta- Pasta 80g
- Water 1L
- Coarse salt 1 Tbsp
Main Ingredients & Sauce- Store-bought basil pesto 1-2 Tbsp (adjust to taste)
- Sun-dried tomatoes (homemade or store-bought) as desired
- Large shrimp 8 pieces
- Ground black pepper, a pinch
- Salted butter 1 tsp

Cooking Instructions
Step 1
First, peel and thoroughly wash the shrimp. Submerge them in warm water to thaw. Once thawed, pat them dry completely with paper towels.
Step 2
Heat a pan over medium heat and melt 1 tsp of salted butter. Add the prepared shrimp and a pinch of freshly ground black pepper. Stir-fry quickly over high heat to bring out the shrimp’s flavor.
Step 3
Sear the shrimp on both sides until golden brown and nicely cooked. Once cooked, transfer them to a separate plate and set aside.
Step 4
In a deep pot, bring 1L of water to a rolling boil with 1 Tbsp of coarse salt. Once the water is boiling, add 80g of pasta and cook according to package directions (usually 8-10 minutes).
Step 5
Drain the cooked pasta using a colander. Briefly rinse it under cold running water to cool it down, then shake off any excess water.
Step 6
Arrange the drained pasta attractively on a serving plate.
Step 7
Top the pasta with the previously cooked shrimp and sun-dried tomatoes. Finally, add 1-2 Tbsp of store-bought basil pesto sauce, adjusting to your preference. This simple yet elegant basil pesto cold pasta is now complete! For an extra touch, you can drizzle a little olive oil.
