Today, I’m sharing a super simple yet universally loved recipe for rolled omelet (Gyeranmari). It’s a fantastic way to use up leftover vegetables from your fridge, making it both colorful and flavorful.

Rolled Omelet Ingredients

  • 4 large eggs
  • 1 Tbsp milk
  • Pinch of salt
  • Pinch of black pepper
  • About 1/2 cup finely chopped vegetables of your choice (e.g., carrots, green onions, onion, bell peppers)

Feel free to use any vegetables you like in your rolled omelet! This is a perfect recipe to clear out those odds and ends of produce you have in the refrigerator. Adding finely chopped vegetables will create a more interesting texture and vibrant appearance.

Finely mince your chosen vegetables. Mincing them small ensures they incorporate well with the egg mixture and prevents the omelet from falling apart when you roll it, resulting in a neat shape.

To make a thick and satisfying rolled omelet, use at least 4 eggs. You can increase the number of eggs for an even more generous portion.

Once done, let it cool slightly before slicing it into bite-sized pieces.
