Easy and Delicious Rolled Omelet Using Up Fridge Veggies!
Today, I’m sharing a super simple yet universally loved recipe for rolled omelet (Gyeranmari). It’s a fantastic way to use up leftover vegetables from your fridge, making it both colorful and flavorful.
Rolled Omelet Ingredients- 4 large eggs
- 1 Tbsp milk
- Pinch of salt
- Pinch of black pepper
- About 1/2 cup finely chopped vegetables of your choice (e.g., carrots, green onions, onion, bell peppers)
Cooking Instructions
Step 1
Feel free to use any vegetables you like in your rolled omelet! This is a perfect recipe to clear out those odds and ends of produce you have in the refrigerator. Adding finely chopped vegetables will create a more interesting texture and vibrant appearance.
Step 2
Finely mince your chosen vegetables. Mincing them small ensures they incorporate well with the egg mixture and prevents the omelet from falling apart when you roll it, resulting in a neat shape.

To make a thick and satisfying rolled omelet, use at least 4 eggs. You can increase the number of eggs for an even more generous portion.

Add 1 tablespoon of milk to the egg mixture for an extra soft and moist rolled omelet. Milk helps to reduce any eggy smell and adds a lovely richness to the flavor.

Heat a generous amount of oil in your pan. Pour a thin layer of the egg mixture and tilt the pan to spread it evenly, forming a nice circle.

As you roll the omelet and there’s a small section left, pour in a little more egg mixture. This time, pour just a thin layer and evenly sprinkle the finely chopped vegetables you prepared. This technique helps create a flavorful omelet packed with vegetables.

To ensure the omelet cooks through evenly without burning, maintain a low heat. High heat can cause the outside to brown while the inside remains uncooked. Continue repeating this process of adding a little egg mixture, sprinkling vegetables, and rolling the omelet. This will result in a beautifully plump and delicious rolled omelet!
