Yesterday, my daughters and I watched ‘Night Goblin’ on JTBC, and they went wild seeing the egg sandwiches (Tamago Sando) and Rosu Katsu Sando featured from Itaewon’s famous restaurants! Since a spontaneous trip to Itaewon wasn’t an option, we decided to whip up a Tamago Sando using ingredients we already had at home. The melt-in-your-mouth tenderness of the egg combined with soft bread makes this sandwich not only a perfect snack for kids but also a delightful light brunch option.
Ingredients for 2 Servings- 6 large eggs
- 3 Tbsp heavy cream
- 1 Tbsp mirin (sweet rice wine)
- 1-2 Tbsp mentsuyu (Japanese soy sauce base) or salt to taste
- 4 slices of bread
- 4 Tbsp mayonnaise
Cooking Instructions
Step 1
In a bowl, crack 6 large eggs. Whisk in 3 tablespoons of heavy cream for extra richness and 1-2 tablespoons of mentsuyu for a savory depth of flavor. If you don’t have mentsuyu, a pinch of salt will suffice. Heavy cream can be substituted with regular milk if needed.
Step 2
Add 1 tablespoon of mirin to the mixture and whisk everything together until well combined. It’s important to whip the eggs generously to achieve a very smooth and fluffy texture.

You can either cook this like fluffy scrambled eggs in a lightly greased pan over low heat, or like a soft Japanese omelet (tamagoyaki). Choose the method that best suits your desired texture.

The key to an exceptional egg sandwich is achieving an incredibly soft and moist egg filling. Avoid overcooking; you want it to be almost custardy and melt in your mouth.

Before the egg is fully cooked, gently roll it up within the pan. This technique helps to keep the egg incredibly moist and tender, creating a perfect filling.

Spread 4 tablespoons of mayonnaise evenly on one side of each slice of bread. While some enjoy mixing a tiny bit of wasabi into the mayonnaise for a kick, I’m keeping it simple with just mayonnaise today since it’s for the kids. Even plain mayonnaise is absolutely delicious!

Carefully place the moist, rolled egg filling onto the mayonnaise-smeared bread slices.
Step 8
Gently place another slice of bread on top of the egg filling to complete the sandwich. This helps to hold everything together.

Lightly press down on the sandwich to secure the layers, then slice it into four equal portions.

And there you have it – a wonderfully moist and tender Tamago Sando! My daughter’s eyes lit up like crescents when she saw it, exclaiming it looked exactly like the sandwich from ‘Night Goblin.’ Seeing her so happy made my day!
