Hello everyone! We all love the soft, comforting steamed egg that perfectly complements spicy dakbal (Korean chicken feet). Today, I’m sharing a simple yet delicious recipe to recreate that authentic dakbal house steamed egg right in your own kitchen! Many dakbal restaurants achieve that savory depth with a rich broth, while others might use a touch of MSG. For our homemade version, we’ll be using a homemade anchovy and kelp broth for an extra layer of flavor! Prepare the broth in advance for an even quicker cooking process.
Ingredients- 2 large fresh eggs
- 200ml anchovy and kelp broth, chilled
- 1/6 Tbsp salt (for seasoning)
- 1 Tbsp minced green onions
- A drizzle of sesame oil
- Optional: A pinch of sesame seeds for garnish

1. Start by cracking 2 large fresh eggs into a bowl. To make things easier and cleaner, place a fine-mesh sieve over the bowl before cracking the eggs. This way, if any shell fragments fall in, they’ll be caught by the sieve, ensuring a smooth egg mixture.

2. Whisk the eggs gently until well combined. Now, for that signature savory flavor, add 200ml of chilled anchovy and kelp broth. If you don’t have broth, you can substitute with 200ml of water, but for a restaurant-like umami boost, add a tiny pinch of MSG. Season with 1/6 Tbsp of salt. Add a sprinkle of sesame seeds for a nutty aroma. For extra freshness and flavor, stir in 1 Tbsp of minced green onions. A small amount of minced garlic is also a great addition if you like! Pour the seasoned egg mixture into a microwave-safe dish. Cover the dish with a microwave-safe lid or plastic wrap, and poke 2-3 small holes with a chopstick or skewer to allow steam to escape during cooking.

3. Microwave on high for approximately 4 minutes and 30 seconds. Cooking times may vary depending on your microwave’s wattage and the amount of egg mixture. You might need to adjust the time slightly. Once cooked and puffed, drizzle a little sesame oil over the top. This not only enhances the flavor but also helps eliminate any eggy smell.
