  • 1/4 fresh onion
  • 120ml milk (about 1/2 cup)
  • 1 ripe tomato

  • Pinch of fresh salt (to taste)
  • Generous amount of mozzarella cheese (or cheddar cheese)
  • Generous amount of olive oil (or cooking oil)

Cooking Instructions

Step 1

Let’s start by preparing the ingredients. If you’re using sliced ham or bacon, cut them into small pieces, about 1cm wide. This ensures they distribute evenly throughout the frittata, adding flavor.

Step 2

Peel and wash the onion thoroughly, then finely mince it to a size similar to the ham. Sautéing the onion brings out its sweetness, enhancing the overall flavor of the frittata.

Step 3

Wash the tomato under running water, remove the stem, and slice it into flat pieces about 0.5cm thick. Slicing them too thinly might cause them to break apart during cooking, so aim for a moderate thickness.

Step 4

Trim the tough ends of the fresh spinach, then wash it thoroughly under running water. Next, cut the spinach into manageable pieces, about 2-3cm long. Cutting them into appropriate lengths prevents them from clumping together when cooked.

Step 5

Crack the 5 eggs into a bowl. Add 120ml of milk for a tender texture. Season with a small pinch of salt, about two pinches, and gently whisk with a fork or whisk until just combined, avoiding too much froth. Mixing the milk well with the eggs will result in a moist frittata.

Step 6

Prepare the pan you’ll use for cooking the frittata. Heat the pan over medium-low heat and add a generous amount of olive oil. Tilt the pan to ensure the oil evenly coats the bottom. If there isn’t enough oil, the ingredients might stick.

Step 7

Add the minced onion and ham (or bacon) to the preheated pan and sauté over medium-low heat. Cook for about 2-3 minutes until the onion becomes translucent and the ham is lightly golden. Sautéing these ingredients beforehand significantly enhances their flavor.

Step 8

Add the prepared spinach to the pan with the sautéed onion and ham. Stir-fry briefly until the spinach just begins to wilt, about 30 seconds to 1 minute. Be careful not to overcook, as this can diminish the spinach’s crispness.

Step 9

Once the vegetables are slightly cooked, pour all the prepared egg mixture evenly over them in the pan. Reduce the heat to low, and observe as the egg mixture begins to set around the edges. It’s crucial to maintain low heat at this stage to prevent the bottom from burning.

Step 10

When the bottom layer of the egg mixture has set and the top surface is slightly firm, arrange the sliced tomatoes attractively over the egg. Then, sprinkle a generous amount of mozzarella cheese evenly on top. If the edges of the pan appear dry, drizzle a little more olive oil around the sides. This will help ensure even cooking and a moist result.

Step 11

Now, cover the pan with a lid and continue to cook slowly over medium-low heat. Covering the pan traps heat, allowing the frittata to cook evenly through the center without burning the bottom. Cook for about 5-8 minutes, or until the top of the egg is completely set and the cheese is melted.

Step 12

Traditionally, frittatas are baked in the oven for the most tender and evenly cooked result. However, if you don’t have an oven, don’t worry! Using a lidded skillet and cooking slowly over low heat will allow you to achieve a delicious frittata without one.

Step 13

Your nutritious spinach frittata is ready – perfect for a delightful weekend brunch or a hearty breakfast! This Italian omelet is truly delicious. We highly recommend you give it a try. For an extra touch of flavor, you can serve it with a side of ketchup, which adds another layer of taste. Enjoy your meal!
