  • 1 Tbsp Olive Oil

Cooking Instructions

Dice the smoked salmon into approximately 1cm cubes. Finely chop the stem of the cooked broccoli into similar-sized pieces. In a bowl, combine the diced salmon and broccoli. Add 1 Tbsp olive oil, a pinch of salt, and a pinch of pepper. Gently toss to marinate and set aside for a few minutes to enhance flavor.

In a wide bowl, crack 2 fresh eggs. Using chopsticks or a whisk, thoroughly break the egg whites (remove the chalazae) and beat until smooth. For a creamier and more tender omelette, add 2 tablespoons of milk and mix well. Finally, add a small pinch of salt to lightly season the mixture.

Heat a non-stick frying pan over medium-low heat. Add a little cooking oil and swirl to lightly coat the entire surface of the pan. Once the oil is adequately heated, pour in the beaten egg mixture. Pouring the eggs into a well-heated pan helps in achieving a beautifully shaped omelette from the start.

As the egg mixture begins to set, gently stir with chopsticks, moving from the edges towards the center, creating soft curds, similar to scrambled eggs. When the eggs are about 70% cooked, carefully gather the marinated smoked salmon and broccoli to one half of the pan. Be cautious not to overheat the pan at this stage.

Gently lift the uncooked portion of the egg and fold it over the salmon and broccoli filling, completely encasing the ingredients to secure them and shape the omelette. Cook on low heat for a little longer to ensure the inside is fully cooked.

Carefully transfer the finished smoked salmon omelette onto a serving plate. Arrange a few pieces of steamed broccoli alongside as a garnish. Mix ketchup and hot sauce to your preference and artfully drizzle it over the omelette. For an extra touch, sprinkle a little parsley flakes.
