Fluffy Scrambled Egg Fried Rice
Foolproof & Delicious Scrambled Egg Fried Rice Anyone Can Make
This is an incredibly simple yet guaranteed-to-be-delicious scrambled egg fried rice, as soft as cotton candy. My wife loved it! ♥️♥️
Ingredients- 2 servings cold cooked rice (approx. 400g)
- 4 large eggs
- 1/2 medium onion, finely chopped
- 1/3 medium carrot, finely chopped
- 10 Vienna sausages, sliced
- 100ml milk
- 1/2 Tbsp butter (approx. 7-8g)
- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- Pinch of salt
- Pinch of black pepper
- 50ml water
Cooking Instructions
Step 1
First, heat a generous amount of cooking oil in a pan over medium heat. Slice the Vienna sausages into bite-sized pieces. Finely chop the onion and carrot. Add the chopped sausages, onion, and carrot to the hot pan and sauté until fragrant and the vegetables begin to turn translucent.
Step 2
Meanwhile, in a separate bowl, crack the 4 eggs. Add the 100ml milk, a tiny pinch of sugar (this adds a subtle sweetness and helps with tenderness!), a pinch of salt, and 50ml of water. Gently whisk with a fork or whisk until just combined; you don’t want to create too much foam. Ensure the yolks and whites are evenly mixed.
Step 3
Once the vegetables and sausages are nicely browned, add the 2 servings of cold cooked rice to the pan. If the rice is clumpy, gently break it up with your spatula. Add 1 Tbsp of oyster sauce and a pinch of black pepper. Stir-fry until the rice is well combined with the vegetables and sausages. The oyster sauce will add a wonderful umami flavor.
Step 4
Next, pour 1 Tbsp of soy sauce along the edge of the pan and stir-fry with the rice. The soy sauce will caramelize slightly, adding more depth of flavor. Reduce the heat to low to prevent burning. It’s important to stir-fry slowly, scraping the bottom of the pan with your spatula, until each grain of rice is separate and slightly toasted.
Step 5
When the fried rice is almost done, keep the heat low and add the 1/2 Tbsp of butter. Stir well until the butter is melted and coats the rice, adding a rich, glossy finish and a nutty aroma. Ensure it’s evenly incorporated.

There you have it – delicious fried rice is ready! The vegetables and sausages are beautifully integrated, making it both visually appealing and incredibly tasty.

Carefully transfer the fried rice onto a serving plate. While it’s great on its own, adding soft scrambled eggs will make it even more special.

Wipe the same pan clean and heat it over low heat. Pour in the egg mixture you prepared earlier. Gently swirl the pan to spread the egg mixture thinly and evenly. Let it cook without stirring.

Be careful not to overcook the scrambled eggs, as they can become tough. Remove the pan from the heat when the eggs are about 70-80% cooked and still slightly moist. The residual heat will finish cooking them to a perfect, soft consistency, just like cotton candy. This is key to a tender texture!
