Essential Ingredients- 2 medium potatoes
- 4 eggs
- 1/4 onion
- 2 Tbsp canned corn
- 3 strips bacon
- 1 tomato
- 1 slice cheddar cheese
- 1/2 cup milk
- 1 cup pizza cheese
Seasoning Ingredients- 2 Tbsp olive oil
- Pinch of salt
- Pinch of black pepper
- 1 Tbsp grated Parmesan cheese
- Pinch of dried parsley
- 2 Tbsp olive oil
- Pinch of salt
- Pinch of black pepper
- 1 Tbsp grated Parmesan cheese
- Pinch of dried parsley
Cooking Instructions
Step 1
Begin by preparing the star of your frittata: the potatoes. Peel the potatoes and slice them thinly into rounds, about 0.3 cm thick. Pat the sliced potatoes dry with paper towels to remove excess moisture.
Step 2
In a large bowl, combine the sliced potatoes with 2 Tbsp olive oil, a pinch of salt, a pinch of black pepper, 1 Tbsp grated Parmesan cheese, and a pinch of dried parsley. Gently toss everything together, ensuring the potatoes are evenly coated with the seasoning. This step enhances the potatoes’ flavor.
Step 3
Arrange the seasoned potato slices in an overlapping pattern in an oven-safe dish or skillet. Layering the potatoes neatly will help create a beautiful frittata shape.
Step 4
Place the dish in a preheated oven at 200°C (400°F) and bake for about 15 minutes, or until the potatoes are slightly golden and tender. This initial baking helps achieve a fluffy texture.
Step 5
While the potatoes are baking, prepare the other ingredients. Finely chop the onion. Dice the bacon into small pieces. Remove the seeds from the tomato and dice it into bite-sized pieces. In a separate bowl, whisk the 4 eggs. Add the chopped onion, 2 Tbsp canned corn, diced bacon, diced tomato, 1/2 cup milk, 1 slice of cheddar cheese (torn into small pieces), and 1 cup of pizza cheese to the eggs. Mix everything thoroughly, ensuring the cheese is evenly distributed.
Step 6
Carefully pour the egg mixture from step 4 over the partially baked potatoes in the oven dish. Ensure the egg mixture settles well amongst the potato slices. Return the frittata to the 200°C (400°F) oven and bake for another 15-20 minutes, or until the eggs are fully set and the top is golden brown and slightly puffed. Cooking times may vary depending on your oven. Enjoy your delicious Potato Frittata!
