Fluffy Omurice (Japanese-style Omelet Rice)
Make Your Kids Love Vegetables with Delicious Omurice!
Even picky eaters who usually shy away from vegetables absolutely devour homemade Omurice! It’s also a fantastic way to use up leftover ingredients in your fridge. This is a staple in our home, made at least once a week, loved by everyone from toddlers to adults. The colorful presentation and soft, blanket-like egg topping are sure to whet the appetite, while the hidden vegetables within the fried rice contribute to a healthy meal.
Main Ingredients- 2 eggs
- 1/2 onion
- 1/4 zucchini
- 1/4 carrot
- 1/4 green onion (scallion)
- 3 slices bacon
- 100g Spam
- a pinch of sesame seeds
Cooking Instructions
Step 1
First, prepare the ingredients for the fried rice filling. Finely dice the onion, zucchini, and carrot into small, manageable pieces that are easy for children to eat. Chop the green onion finely as well. Cut the bacon and Spam into small, bite-sized cubes. Dicing the ingredients small helps them meld well with the rice and creates a softer texture, making it more appealing to kids.
Step 2
Heat 4 tablespoons of cooking oil in a wok or large skillet over medium heat. Once the oil is shimmering, add the chopped green onion and sauté until fragrant, infusing the oil with its aroma. Next, add the diced carrots and stir-fry briefly. Then, add the Spam and bacon and cook until lightly browned and flavorful. Finally, add the diced onion and zucchini and continue to stir-fry until all the vegetables are softened and translucent. You’ll notice a sweet aroma as they cook.
Step 3
Once all the vegetables, Spam, and bacon are well-fried, season with a pinch of salt and 1 tablespoon of tuna extract. Mix everything thoroughly to ensure even seasoning. Tuna extract adds a wonderful umami depth, creating a rich flavor without needing extra seasonings. Taste and add a little more salt if needed.
Step 4
Add the cooked rice to the well-fried vegetable mixture. Use a spatula to gently mix the rice with the ingredients, being careful not to mash the rice grains. Stir-fry over medium heat until the rice grains are separate and slightly toasted. Finish by sprinkling in a pinch of sesame seeds for added nutty flavor and aroma. Your delicious fried rice is now ready!
Step 5
It’s time to shape the fried rice. Pack the fried rice tightly into a small, deep bowl or ramekin. Press it down firmly, then level the surface. This will help create a neat, rounded shape when you invert it onto the plate. Carefully flip the bowl over onto your serving plate to create the classic Omurice ‘rice mound’.
Step 6
Now, let’s make the signature egg topping for the Omurice. In a clean bowl, crack 2 eggs. Add a pinch of salt and 2 tablespoons of water, then whisk well. Adding water makes the egg omelet extra soft and moist. Lightly grease a non-stick pan with a little oil and heat over low to medium-low heat. Pour the whisked egg mixture thinly and evenly to form a round omelet. The key is to cook it without it becoming too thick, ensuring it’s cooked through.
Step 7
Carefully slide the cooked egg omelet over the fried rice mound, ensuring it covers it completely without tearing. Gently adjust it if needed. Finally, artfully drizzle ketchup over the egg and sprinkle with parsley flakes for a beautiful garnish. Your impressive Omurice is complete, ready to delight both kids and adults!
