Sandwich Ingredients

  • 7 Morning Buns
  • 2 Eggs
  • 3-4 Imitation Crab Sticks (like surimi or Kani Kama)
  • 1/2 can Canned Corn (drained)
  • 1/4 head Cabbage
  • 4 Tbsp Mayonnaise (or adjust to taste)

Seasoning

  • Pinch of Salt
  • Pinch of Black Pepper

Cooking Instructions

Step 1

Start by boiling the eggs. Once the water comes to a boil, carefully add the eggs and cook for about 15 minutes to achieve a hard-boiled consistency. Rinse the cooked eggs under cold water, let them cool, and then peel them.

Step 1

Step 2

Finely shred the cabbage. Place the shredded cabbage in cold water for a few minutes to enhance its crispness. Afterward, rinse thoroughly and drain the water completely using a colander. Excess water can make the sandwich soggy.

Step 2

Step 3

Drain the canned corn thoroughly. Ensure all excess water is removed by pressing it through a sieve. This prevents the sandwich from tasting watery.

Step 3

Step 4

Peel the imitation crab sticks and shred them into bite-sized pieces with your fingers. Aim for a texture that has some bite rather than being too finely minced.

Step 4

Step 5

Using a serrated knife, carefully slice the morning buns in half horizontally. Crucially, do not cut all the way through on one side, leaving a small hinge. This will help hold the filling inside.

Step 5

Step 6

Mash the hard-boiled eggs using a fork or a potato masher until they are soft and well-broken down. Ensure there are no large chunks, allowing for a smooth blend with the other ingredients.

Step 6

Step 7

In a medium bowl, combine the mashed eggs, shredded cabbage, shredded imitation crab, and drained corn. Add the mayonnaise, a pinch of salt, and a pinch of black pepper. Mix everything together gently until well combined. Taste and adjust seasoning with more mayonnaise, salt, or pepper if needed.

Step 7

Step 8

Generously spoon the prepared egg salad mixture into the halved morning buns. Your delicious morning bun egg sandwiches are now ready to be enjoyed! For an extra touch, you can add lettuce or baby greens inside.

Step 8
