Ingredients
  • 2 slices of bread (slightly stale works best)
  • 1 cup (200ml) milk
  • 2 eggs
  • 2-3 Tbsp brown sugar (adjust to taste)
  • 1/2 tsp ground cinnamon
  • A handful of walnuts
  • A handful of almonds
  • A handful of raisins
  • Olive oil or butter, for cooking
  • A pinch of salt

Cooking Instructions

Step 1

First, cut the bread into bite-sized cubes, about 2-3 cm. Lightly toast the nuts (walnuts and almonds) in a dry pan over low heat until fragrant, then finely chop them. In a large bowl, combine the cubed bread, chopped nuts, and raisins. Crack in the eggs and pour in the milk. Add a pinch of salt to balance the flavors.

Step 2

Heat a non-stick pan over medium-low heat. Add a generous amount of olive oil or butter. Using butter will add a richer flavor. A well-seasoned pan will prevent sticking and ensure even browning.

Step 3

Using a ladle or spoon, scoop portions of the bread mixture and drop them onto the heated pan, forming small, round shapes. Leave some space between each portion so they don’t stick together. Allow the mixture to spread naturally on the pan.

Step 4

Cook over medium-low heat until golden brown on one side, then flip and cook the other side until equally golden and crispy. It’s important to cook them long enough for the inside to become soft and moist. Once golden, sprinkle the mixture of brown sugar and cinnamon evenly over the French toast bites for a sweet aroma and taste.

Step 5

Arrange the finished French toast bites attractively on a serving plate. Serve with a fresh salad, some fruit, or a drizzle of maple syrup for a more complete and delightful meal. You’ll be amazed at how delicious this dish is, especially using leftover bread! Highly recommended as a brunch option!
