  • 0.5 Tbsp Mirin (or cooking sake)
  • 10g Green onion (about 2-3cm, finely chopped)
  • 1/4 tsp Salt (adjust to taste)

Crack 2 fresh eggs into a bowl, making sure to remove the chalazae (the stringy bits). Add 150ml of warm water, 0.5 Tbsp of mirin, and 1/4 tsp of salt. Gently whisk the mixture, avoiding excessive foam, until well combined. Then, strain the egg mixture through a fine-mesh sieve 2-3 times to achieve a silky smooth consistency. Meanwhile, ensure the halibut fillet is free of bones and skin, then slice it thinly into strips about 0.5cm wide. Finely chop the green onion and set aside.

Add the thinly sliced halibut strips to the smooth egg mixture. Gently stir with chopsticks or a fork to distribute the fish evenly within the egg mixture. Be careful not to overmix, as this can cause the eggs to curdle.
