An Upgraded Version of Soy Sauce Egg Rice: The Fluffy Egg Mash Recipe

Ingredients- 4 eggs
- 1-2 Tbsp oyster sauce (adjust to taste)
- 2 Tbsp perilla oil or cooking oil
- Cooked rice
- Parsley flakes (optional)
Cooking Instructions
Step 1
First, add 2 tablespoons of perilla oil to the pan. If you don’t have perilla oil, regular cooking oil works fine. Crack 4 eggs into the oiled pan.
Step 2
Once the eggs are in, gently stir the egg whites as if making scrambled eggs. The goal here is to lightly cook the whites first, similar to how you’d start scrambled eggs.
Step 3
When you feel the egg whites are about 80% cooked, add 1 tablespoon of oyster sauce around the edges of the pan. The standard ratio is 1 tablespoon of oyster sauce per 2 eggs, but this can be quite salty for some. It’s recommended to start with 1 tablespoon and add more later if needed after tasting.
Step 4
Now, reduce the heat to very low or turn it off completely. Use the residual heat from the pan to gently stir the yolks into the whites, scrambling them together. It’s important to mix until the yolks are softly incorporated.
Step 5
During this process, some parts of the egg might cook a bit more, like a fried egg, if the heat was a bit high. But that’s okay! This texture actually makes the ‘Egg Mash’ even softer and more moist. The finished dish will be wonderfully fluffy.

And there you have it! Your delicious Egg Mash is ready. Generously spoon this soft, fluffy mixture over a bowl of warm cooked rice.
