Super Simple Microwave Egg Custard: Perfect for Busy Mornings
My daughter’s absolute favorite is steamed eggs! This microwave recipe is a lifesaver for quick and easy breakfasts. It’s so simple, making it perfect for those mornings when you need to get a meal on the table in a flash. I highly recommend it for anyone who needs a fast and satisfying meal. A little tip: adding some chopped green onions enhances the flavor even more!
Ingredients- 2 large fresh eggs
- 1/2 cup water (approx. 100ml)
Seasoning & Flavor Enhancers- 1 tsp salt (or 1/2 Tbsp soy sauce)

Cooking Instructions
Step 1
Crack 2 large fresh eggs into a microwave-safe bowl or mug. For an even smoother texture, you can remove the chalazae (the white, rope-like strands).

Add 1 teaspoon of salt to the eggs. This will season the eggs and enhance their flavor. Alternatively, you can use 1/2 tablespoon of soy sauce for a richer taste.

Stir in 1 tablespoon of mirin (or cooking sake). This is excellent for neutralizing any eggy smell and adding a subtle sweetness. If you don’t have mirin, a drop or two of sesame oil can also work.

Add 0.5 teaspoon of minced garlic for an extra layer of flavor. If you’re not a fan of garlic or are making this for picky eaters, feel free to omit it.

Pour in about 1/2 cup of water (approximately 100ml). The amount of water will affect the tenderness of the steamed eggs, so feel free to adjust it to your preference. A common ratio is 1:1 egg to liquid, but more water will result in a softer, more custardy texture.

Whisk everything together gently with a fork or whisk until well combined and smooth. Ensure there are no streaks of egg white or yolk remaining for a uniform consistency.

Cover the bowl tightly with plastic wrap. This helps to retain moisture, resulting in a beautifully tender and moist steamed egg dish.

Carefully poke 4-5 small holes in the plastic wrap using a toothpick or the tip of a knife. These vents will allow steam to escape, preventing the egg custard from bursting.

Place the covered bowl into the microwave.

Microwave on high for about 2 minutes. Cooking time can vary depending on your microwave’s wattage. I prefer my egg custard slightly more cooked, so I usually go for 2 minutes and 20 seconds. Check for doneness by gently shaking the bowl; the top should be set and slightly jiggly. If it’s still too soft, microwave in additional 10-20 second increments.
