Let me guide you step-by-step on how to make these irresistible crab stick and egg pancakes.

  • Servings : 3 servings
  • Cooking Time : Within 30 minutes

Ingredients

  • 1 pack (approx. 150g) imitation crab sticks
  • 3 Tbsp minced green onion
  • 2 Tbsp minced bell pepper
  • 1 green chili pepper (or 1 Cheongyang chili pepper)
  • 2 eggs
  • 1 Tbsp sesame oil
  • 1 Tbsp cooking wine (mirin or rice wine)
  • 0.3 tsp salt
  • A pinch of black pepper
  • Cooking oil, for frying

Cooking Instructions

Step 1

First, prepare 1 pack (about 150g) of imitation crab sticks. Unwrap them from their plastic packaging and gently shred them along the natural grain into bite-sized pieces. It’s best to leave some texture rather than shredding them too finely for a better mouthfeel.

Step 1

Step 2

Next, let’s prepare the vegetables that will add color and flavor. Finely mince 1 green chili pepper after removing the seeds. If you like a spicier kick, you can use a Cheongyang chili pepper instead. Finely chop about 3 tablespoons of green onion and 2 tablespoons of bell pepper. You can substitute bell peppers with other colorful vegetables you have on hand, such as carrots or paprika. Feel free to use up any leftover vegetables in your fridge!

Step 2

Step 3

In a large bowl, combine the shredded crab sticks and the finely chopped vegetables. Crack 2 fresh eggs into the bowl. Using fresh eggs will result in a more tender pancake.

Step 3

Step 4

Now, let’s add the seasonings to enhance the flavor. Stir in 1 tablespoon of sesame oil for a nutty aroma and 1 tablespoon of cooking wine to remove any fishy odors. Since the crab sticks are already slightly salted, add just about 0.3 teaspoon of salt to season. Finally, add a pinch of black pepper to complete the flavor profile. Use a spoon to gently mix all the ingredients until well combined. Avoid overmixing, as this helps maintain the tender texture of the crab sticks.

Step 4

Step 5

And just like that, your simple and delicious crab stick pancake batter is ready! Doesn’t it look appetizing?

Step 5

Step 6

Now it’s time to cook the pancakes. Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Plenty of oil ensures the pancakes cook evenly without burning. Scoop spoonfuls of the batter onto the hot pan, forming round shapes. Aim for about 2-3 tablespoons per pancake.

Step 6

Step 7

As the edges of the pancakes begin to set and turn golden, use a spatula to gently tuck in any overflowing batter, shaping them into neat rounds. Don’t worry if they aren’t perfectly round; slightly rustic shapes can be quite charming!

Step 7

Step 8

Once the edges are golden brown and the top surface of the egg is starting to set, carefully flip the pancakes with your spatula. Gently press down with the spatula to ensure they cook through evenly on the other side until golden brown. It’s important to cook them thoroughly to ensure the inside is fully cooked.

Step 8

Step 9

Continue pressing lightly with the spatula as they cook to ensure the inside is done. Your delicious crab stick and egg pancakes are now ready! They should be crispy on the outside and tender on the inside – a wonderful side dish!

Step 9

Step 10

Arrange the beautifully cooked crab stick pancakes on a serving plate. For an extra touch, sprinkle with parsley flakes or top with thinly sliced green onions. These delightful crab stick side dishes are perfect for kids’ meals or as a tasty snack for adults!
