This is a fantastic recipe to use up those one or two slices of bread that are left over, or even the bread crusts! It’s a classic ‘fridge clean-out’ dish that’s incredibly easy to make in a frying pan without needing an oven. Perfect for a quick and satisfying meal!

Ingredients

  • 2 slices of bread
  • 3 eggs
  • Vegetables from your fridge (optional)
  • 1-2 slices of cheese (optional)
  • Salt
  • 1 tbsp butter or cooking oil
  • Tomato ketchup

First, crack 3 eggs into a bowl. Carefully remove the chalazae (the white stringy bits) from the eggs. Then, add a pinch of salt and whisk everything together until well combined and smooth. Ensure there are no lumps for a perfectly smooth egg mixture.

Finely chop any leftover vegetables from your fridge (like green onions, onions, bell peppers, etc.), ham, or cheese. Adding finely chopped vegetables will help them blend well with the egg mixture and make the omelet tender. If you don’t have any of these extra ingredients, don’t worry! The omelet will be delicious with just bread and eggs.

Tear the 2 slices of bread into bite-sized pieces using your hands. Tearing the bread and mixing it into the egg batter will add a wonderfully fluffy texture to the omelet. You can also use the bread crusts for this recipe.

Add the torn bread pieces, chopped vegetables, ham, and cheese (if using) to the beaten egg mixture. Stir everything together thoroughly. For an even softer and richer texture, you can add 2-3 tablespoons of milk to the mixture.

Heat a non-stick frying pan over medium-low heat. Add 1 tablespoon of butter or cooking oil and swirl to coat the pan evenly. Once the butter is melted, pour the bread and egg mixture into the pan. Gently swirl the pan to spread the mixture into a round shape.

Reduce the heat to low. Cover the frying pan with a lid and let the omelet cook slowly until the center is set. Cooking on low heat prevents burning and ensures a tender result.

Since the omelet can be quite thick, flipping it with a spatula might be difficult. To easily flip it, place a clean plate over the frying pan. Holding both the plate and the pan firmly, carefully invert them together. This will allow you to flip the omelet neatly without breaking it.

After flipping, cover the pan again with the lid and continue to cook on low heat. Keep a close eye on it to prevent burning, ensuring the second side is golden brown and cooked through. Cook until the center is fully set.

Once both sides are golden brown and cooked evenly, carefully slide the finished omelet onto a serving plate. You can cut it into wedges or any shape you prefer for a nice presentation.
