A perfect dish for busy mornings, this steamed egg is quick to make and satisfying to eat! Instead of water, we use rich milk, and season with salt and soy sauce for an umami boost. Create a wonderfully soft steamed egg that even children will love! 🙂

Ingredients

  • 4 large eggs
  • 150ml milk
  • 1/2 tsp fine salt
  • 1 Tbsp soy sauce (or mentsuyu)
  • Scallions, chopped, for garnish
  • Sesame seeds, for garnish

Cooking Instructions

Step 1

Prepare a single-serving mini earthenware pot (tteukbaegi), about 10-12 cm in diameter. Crack 4 large eggs directly into the pot.

Add 1/2 teaspoon of fine salt to the eggs. This helps to season the eggs evenly and remove any eggy smell.

Add 1 tablespoon of soy sauce (or mentsuyu for a deeper umami flavor) to the eggs and gently mix everything together. If using regular soy sauce, start with 1/2 Tbsp and adjust to taste.

Pour in 150ml of fresh milk. This will make the steamed egg incredibly creamy and soft. Stir gently until just combined, trying not to create too many bubbles.

Place the earthenware pot on the stove over high heat. It’s crucial to stir constantly with a spoon or spatula to prevent the egg mixture from sticking to the bottom and burning. Continue stirring for about 2-3 minutes until the mixture starts to thicken slightly.

Once the egg mixture begins to form soft curds and is about 80% cooked (it should look slightly thickened and creamy), reduce the heat to very low. Cooking it too much at this stage can make it rubbery.

Cover the earthenware pot with a lid or a plate that fits its size. This traps the steam and allows the inside of the egg mixture to cook through gently. Let it steam on low heat for about 1 minute.

Remove the lid to reveal your beautifully fluffy and incredibly soft earthenware steamed egg! The pot keeps it warm, so it’s ready to be enjoyed immediately.

Garnish generously with the chopped scallions and a sprinkle of toasted sesame seeds for a final touch of color and flavor. Your delicious steamed egg is ready to serve!
