Ingredients- 4 Eggs
- 100g Hot cake mix
- 50ml Milk
- 4 Paper cups (for baking)
- A little cooking oil (for greasing the paper cups)
- A pinch of salt
- A few pinches of sugar
- A sprinkle of parsley flakes or basil flakes (for garnish)
Cooking Instructions
Step 1
First, let’s prepare the batter. Measure 100g of hot cake mix into a measuring cup or a medium-sized bowl. For a smoother batter, you can sift the hot cake mix beforehand.
Step 2
To the bowl with the hot cake mix, crack in 1 fresh egg and add 50ml of milk for a tender texture.
Step 3
Now, use a whisk or a fork to combine all the ingredients thoroughly. Make sure there are no lumps of dry mix remaining. Whisk until you achieve a smooth, uniform batter. Using a whisk will make this process much easier and quicker.
Step 4
Let’s check the batter’s consistency. When you lift the whisk or spoon, the batter should flow down slowly in a thick stream. This indicates the perfect consistency – too thin and it might spill, too thick and the bread could become dense.
Step 5
Prepare three paper cups to hold the egg bread. Lightly grease the inside of each paper cup with cooking oil. This step is crucial to prevent the egg bread from sticking, ensuring a clean removal after baking.
Step 6
Pour the prepared batter equally into the three greased paper cups. Fill each cup only about one-third full. This leaves enough space for the egg and any other toppings you’ll be adding.
Step 7
Now it’s time to add the fillings! Depending on your preference, add a portion of shredded mozzarella cheese or sweet corn kernels on top of the batter. I love cheese, so I added a good amount of mozzarella.
Step 8
Carefully crack one fresh egg into each cup, on top of the batter and fillings. Try not to break the yolk. You can gently snip the yolk with kitchen scissors; this helps the egg hold its shape better when cooked.
Step 9
Finally, let’s season the tops for extra flavor. Sprinkle a pinch of salt to enhance the savory notes, and add two to three pinches of sugar for a subtle sweetness. A final sprinkle of parsley flakes or basil flakes will make your egg bread look as good as it tastes!
Step 10
Place the prepared egg bread into the air fryer. Cook at 180°C (350°F) for 5 minutes, then reduce the temperature to 160°C (320°F) and continue cooking for another 15 minutes. A total of 20 minutes will yield delicious egg bread that’s slightly crispy on the outside and wonderfully moist inside. Enjoy them warm!
