Ingredients (Serves 2)- 1 Flounder (or 80g cooked flounder flesh)
- 80g Shrimp (cocktail shrimp or raw shrimp)
- 40g Onion (approx. 1/4 medium onion)
- 15g Carrot (approx. 1/5 small carrot)
- 1 tsp Sesame oil
- 1/4 tsp Soy sauce
- 1 pinch Salt
- 2 cups Breadcrumbs
- 1 cup Frying flour (or tempura powder)
- 2 Eggs
- 1 bowl Cooked rice (warm rice)
Cooking Instructions
Step 1
First, prepare the flounder. If using a fresh flounder, pan-fry it until golden brown on both sides. If you have leftover cooked or grilled flounder, simply flake the flesh from the bones. This method allows for a convenient and resourceful way to use leftover fish.
Step 2
Prepare the shrimp. If using cocktail shrimp, thaw them. If using raw shrimp, peel and devein them. Briefly pan-fry the shrimp before skewering them to enhance their firm texture. (You can omit the shrimp if desired.)
Step 3
Finely mince the vegetables. Dice the onion (40g) and carrot (15g) as finely as possible. Heat a lightly oiled pan and sauté the minced vegetables until their moisture evaporates. Cooking until translucent will improve the texture of the rice dogs.
Step 4
Carefully remove the cooked flounder flesh from the bones. Ensure all bones are removed, leaving only the tender meat. If you are sensitive to fishy odors, you can sprinkle a little cooking wine or sake on the flaked flounder.
Step 5
In a large bowl, combine 1 bowl of warm cooked rice, the flaked flounder, sautéed vegetables, 1 tsp sesame oil, 1/4 tsp soy sauce, and 1 pinch of salt. Mix all ingredients thoroughly with the rice. Taste and adjust seasoning with salt or soy sauce as needed, as the amount of rice can affect the seasoning level.
Step 6
Prepare for assembling the rice dogs. Skewer the pre-cooked shrimp. The shrimp will serve as a central core and add a delightful texture when bitten into.
Step 7
Shape the rice mixture into balls. Enclose the skewer with the shrimp in the center using the rice mixture, forming a round shape. It’s best to make them a size that is easy for children to hold and eat.
Step 8
Coat the rice dogs with the batter in stages. First, dredge each rice dog evenly in frying flour. Then, dip them into the beaten egg. Finally, roll them generously in breadcrumbs, ensuring the entire surface is well-coated. A thorough coating of breadcrumbs is key to achieving a crispy exterior.
Step 9
Heat oil in a deep fryer or a pan to 170-175°C (338-347°F). Carefully place the coated rice dogs into the hot oil. Fry for approximately 3-4 minutes, or until golden brown and crispy. Turn the rice dogs occasionally to ensure even cooking. Be mindful of the oil temperature; too low and they’ll be greasy, too high and they might burn on the outside before cooking through.
Step 10
Your warm and crispy Flounder Rice Dogs are ready! These rice dogs are a crowd-pleaser for all ages, especially popular as a nutritious snack for children who are reluctant to eat fish. Take a bite through the crispy coating to reveal the delicious combination of savory rice, tender flounder, and chewy shrimp. Don’t be intimidated by frying; you can easily make these at home using a frying pan with enough oil to cover the rice dogs, turning them as they cook. Enjoy a delightful meal with these versatile, flavorful, and convenient Flounder Rice Dogs!
