Flounder, Cucumber, and Tomato Cold Soup

Hello everyone! This is Salnimjang. I’m currently exploring recipes featuring flounder. While flounder is best enjoyed as sashimi, I decided to incorporate its freshness into a refreshing cold soup, similar to a chilled raw fish salad (mulhoe). Imagine the delightful combination of tangy and sweet broth with tender flounder! It’s a flavor that feels both novel and comforting, like discovering a familiar taste in a new form. Start with the vibrant sweet and sour broth, and let the rich, savory notes of the flounder linger. Give this Flounder, Cucumber, and Tomato Cold Soup a try!

Sweet & Sour Broth (Tablespoon Measurement)

  • 3 cups water (approx. 600ml)
  • 1 Tbsp salt
  • 4 Tbsp sugar
  • 1/2 cup vinegar (approx. 100ml)

Cooking Instructions

Step 1

First, wash all the ingredients for the cold soup thoroughly and prepare them. Ensuring the flounder sashimi is fresh is key.

Step 1

Step 2

Cut the ripe tomato into bite-sized pieces. For the cucumber, thinly julienne it to maintain a crisp texture. Finely chop the scallion to add a fresh aroma.

Slice the flounder sashimi into strips, similar in thickness to the julienned cucumber. Handle the fish gently to prevent it from breaking apart – this is an important tip.
