Using various ingredients from your freezer, experience the charm of ‘folded pizza’ that you might have missed even in Italy!

Tomato Seafood Calzone Ingredients

  • Frozen mixed seafood 300g
  • Pepperoni 10 slices, thinly sliced
  • Onion 1/2, diced
  • King oyster mushrooms 2, diced
  • Olive oil 3 Tbsp
  • Whole red pepper flakes 1 tsp (adjust for spice level)
  • Garlic herb salt 1 tsp
  • Dried basil 1 tsp
  • Black pepper 1 tsp
  • Tomi Tomato Sauce 5 Tbsp
  • Arrabbiata Tomato Sauce 4 Tbsp
  • Triple cheese blend (mozzarella, cheddar, gouda, etc.) 4 Tbsp

Galbi Basil Cream Calzone Ingredients

  • Galbi (Korean short rib patties) 2, cut into bite-sized pieces
  • King oyster mushrooms 2, diced
  • Onion 1/2, diced
  • Seasoned young radish kimchi 2 Tbsp (for a sweet and tangy kick)
  • Dried basil 1 tsp
  • Garlic herb salt 1 tsp
  • Black pepper 1 tsp
  • Whole red pepper flakes 2 tsp (adjust for spice level)
  • Olive oil 3 Tbsp
  • Store-bought basil cream pasta sauce 300g
  • Triple cheese blend (mozzarella, cheddar, gouda, etc.) 4 Tbsp

Prepare the vegetables that will add flavor to your calzones. Both king oyster mushrooms and onions are used in both types of calzones, so dice them into similar bite-sized pieces. The galbi will go into the basil cream calzone, and the pepperoni into the tomato seafood calzone.

Now, let’s stir-fry the filling ingredients! To minimize dishwashing, you can stir-fry the fillings for both calzones in one pan. For the tomato seafood calzone, add a bit more red pepper flakes to enhance the spiciness, and slightly less for the basil cream calzone. Start by sautéing in a pan with a drizzle of olive oil.

Add more ingredients to the pan. For the tomato seafood calzone, add the frozen seafood along with the pepperoni, onions, and king oyster mushrooms, and stir-fry. Simultaneously, for the basil cream calzone, add the king oyster mushrooms, seasoned young radish kimchi, and galbi, and stir-fry them together.

Add the seasonings to enhance the umami flavor. Add the garlic herb salt, black pepper, and dried basil to both. For the basil cream calzone, use slightly less salt, as the seasoned young radish kimchi and galbi already contain salt.

Now, add the sauces that will define each calzone’s unique taste. For the basil cream calzone, add the store-bought basil cream pasta sauce. For the tomato seafood calzone, mix and add the Tomi Tomato Sauce and Arrabbiata Tomato Sauce. Stir-fry everything together until the sauce thickens and coats the ingredients well.

The tomato seafood calzone sauce might appear slightly watery due to the seafood releasing its natural moisture. This is perfectly normal! You can adjust the consistency to your liking by simmering it a bit longer if needed.

It’s time to use the prepared pastry pizza dough. Spread a generous amount of the basil cream calzone filling onto one half of the dough. By filling only one side, you can fold the other half over to create the calzone shape.

Top the basil cream calzone filling with a generous amount of triple cheese. A blend of three cheeses like mozzarella, cheddar, and gouda will provide rich flavor and a wonderfully stretchy texture.

Similarly, spread the tomato seafood calzone filling onto one half of the pizza dough. Add plenty of cheese on top, then carefully fold the other half of the dough over. Press the edges firmly to seal, ensuring the filling doesn’t leak out. You can use a fork to crimp the edges for a more secure seal.
