Main Ingredients- 1 pack Chicken Breast (approx. 300g)
- 2 stalks Scallions (Green Onions)
- A little Cooking Oil
Chicken Marinade- 1 tsp Turmeric Powder
- 3 Tbsp Cooking Wine (Sake or Mirin)
- 1 pinch Salt
- A little Whole Pepper (ground)
Abalone Oyster Sauce- 2 Tbsp Abalone Oyster Sauce
- 1/2 cup Water (100ml)
- 1 Tbsp Tonkatsu Sauce
- 1 piece Butter (approx. 10g)
- 1 Tbsp Soy Sauce
- 1 Tbsp Corn Syrup (or Oligosaccharide)
- 2 Tbsp Cooking Wine (Sake or Mirin)
- A little Pepper
- 1 tsp Turmeric Powder
- 3 Tbsp Cooking Wine (Sake or Mirin)

Cooking Instructions
Step 1
Prepare all the ingredients for your delicious chicken skewers. Rinse the chicken breast clean and get the scallions ready to be cut into chunky pieces.

Cut the scallions into approximately 2-3 cm lengths. Make them chunky so they look good and are easy to eat when skewered with the chicken. It’s best to have a mix of the thicker white parts and the greener leaves.

Cut the chicken breast into cubes, about 2-3 cm in size, similar to the scallions. Ensure the chicken pieces are uniformly sized for even cooking and a balanced skewer.

In a bowl, combine the chicken pieces with the marinade ingredients: 1 tsp turmeric powder, 3 Tbsp cooking wine, 1 pinch of salt, and a little ground pepper. Gently mix with your hands, ensuring the marinade coats the chicken evenly. Let it marinate for about 10 minutes. Turmeric helps to remove any gaminess from the chicken and adds a subtle aroma.
Step 5
Thread the marinated chicken and scallion pieces alternately onto the skewers. Aim for a visually appealing arrangement with 2-3 pieces of chicken and scallion on each skewer for a variety of textures and colors.

Now, let’s make the delicious sauce. In a small saucepan, combine 2 Tbsp abalone oyster sauce, 1/2 cup water, 1 Tbsp tonkatsu sauce, 1 piece of butter, 1 Tbsp soy sauce, 1 Tbsp corn syrup, 2 Tbsp cooking wine, and a pinch of pepper. Bring to a simmer over medium heat and cook for about 5 minutes, stirring occasionally, until the sauce thickens. Be careful not to let it stick to the bottom.
Step 7
Heat a little cooking oil in a frying pan. Place the skewers one by one onto the hot pan. It’s best to sear the outside on medium-high heat initially to lock in the juices.
Step 8
Turn the skewers frequently to ensure the chicken and scallions cook evenly and turn a nice golden brown. Cook over medium-low heat rather than high heat to ensure the chicken cooks through completely and stays tender. Keep an eye on them to prevent burning.

Once the skewers are mostly cooked, brush them generously with the prepared abalone oyster sauce. Cook for a short while longer, allowing the sauce to adhere to the chicken and caramelize slightly. The sweet and savory sauce will give the chicken a beautiful glaze.
