Main Ingredients- Beef Sirloin 70g (cut into bite-sized pieces)
- Fresh Arugula 100g (washed thoroughly under running water and drained)
- Scallion (Green Onion) 1/2 stalk (chopped)
Seasoning & Others- Minced Garlic 1/2 Tbsp
- Fish Sauce 1/2 Tbsp (can be substituted with soy sauce)
- Ginger Syrup 1/2 Tbsp (can be substituted with ginger powder or minced ginger)
- Sesame Oil 1/3 Tbsp (for finishing)
- Salt a pinch (for adjusting seasoning)
- Black Pepper a little (for seasoning and flavor)
- Olive Oil a little (for stir-frying and seasoning)

Cooking Instructions
Step 1
First, gently wash the arugula under cool running water. After washing, make sure to drain it thoroughly to prevent excess water from making the stir-fry soggy. You can pat it dry with a paper towel or let it drain in a colander.
Step 2
Cut the beef sirloin into bite-sized pieces. Season it with a pinch of salt, a little black pepper, and a drizzle of olive oil. Let it marinate in the refrigerator for about 30 minutes; this will help tenderize the meat and enhance its flavor. (Photos of the marinating step were unfortunately omitted.) Now, heat a generous amount of olive oil in a frying pan over medium-low heat. Add the chopped scallions and minced garlic, and sauté until fragrant. Be careful not to burn the garlic; the goal is to gently release their aromatic essence.
Step 3
Once the aroma of the scallions and garlic has bloomed, add the marinated sirloin to the pan over high heat. Stir-fry quickly, tossing the meat with a spatula to ensure it cooks evenly and doesn’t stick to the pan. Keep the energy up with a ‘shake, shake, shake’ motion for perfectly cooked and delicious sirloin!
Step 4
As soon as the beef changes color and is mostly cooked, add the fish sauce (or soy sauce) and ginger syrup. Continue to stir-fry everything together. Fish sauce adds a wonderful umami depth, while ginger syrup helps eliminate any gamey odors and adds a subtle sweetness. If you don’t have fish sauce, soy sauce is a fine alternative, but adjust the amount to your taste.
Step 5
Turn off the heat completely once all the ingredients are well-stirred and cooked. Immediately add the prepared arugula to the hot pan. Gently toss the arugula using the residual heat of the pan. This will wilt the leaves just enough without overcooking them, preserving their fresh flavor and crisp texture. Avoid cooking for too long, as it can diminish the arugula’s vibrant qualities.
Step 6
After tossing with residual heat, drizzle in the sesame oil for a final touch of aroma and flavor. The nutty fragrance of sesame oil will make the dish even more appealing. If you prefer your arugula slightly more wilted, you can briefly turn the heat back on for just a moment to achieve your desired texture.
