  • 1 bowl of cooked rice (approx. 200g)
  • 2-3 Tbsp minced carrot
  • 1/2 stalk white part of green onion, finely chopped
  • 1/2 Tbsp minced garlic
  • 1-1.5 Tbsp savory oyster sauce (adjust to taste)
  • Pinch of black pepper
  • 4 Tbsp cooking oil

For fried rice, small and plump frozen shrimp or cocktail shrimp are the best! They absorb seasonings wonderfully, making the dish extra delicious. Take the shrimp out to thaw briefly before you start preparing other ingredients.

Frozen shrimp thaw quickly when placed in cold water for about 5-10 minutes. For faster cooking, you can briefly blanch them in boiling water for about 10 seconds. However, thawing in cold water helps preserve the shrimp’s firm, plump texture better.

While the shrimp are thawing, let’s prepare the vegetables that will add depth to your fried rice! Finely dice the carrots into rice-grain size and finely chop the white part of the green onion. Mince the garlic as well.

Now, let’s get cooking! Heat 2 tablespoons of cooking oil in a frying pan over medium heat. Once the pan is hot, add the minced garlic and stir-fry for about 30 seconds, being careful not to burn it, to create an aromatic garlic oil.

As the garlic becomes fragrant, add the chopped green onions and stir-fry them together. You’ll notice a sweet onion aroma as they become translucent. This step significantly enhances the umami flavor of your fried rice.

Next, add the diced carrots and stir-fry until they are slightly tender. Softer carrots will make the fried rice more visually appealing and improve its texture. If the pan seems too dry, add another tablespoon of cooking oil.

Once the carrots are somewhat cooked, add the thawed shrimp and a pinch of salt. Stir-fry them quickly over medium-high heat until the shrimp turn pink and become plump. Avoid overcooking, as they can become tough. Cooking them over medium-high heat adds a subtle smoky flavor, which is a key to delicious fried rice!

When the shrimp are cooked, pour 1 tablespoon of oyster sauce around the edges of the pan. Stir-fry everything together to incorporate the rich umami flavor. Start with 1 tablespoon, taste, and add another 0.5 tablespoon if needed to reach your desired seasoning.

Fried rice is best made with slightly cooled rice rather than hot, freshly cooked rice. This prevents the rice grains from clumping and results in a fluffier texture. However, don’t worry too much if you’re using hot rice; it will still turn out delicious!
