Today we’re diving into another delightful sandwich experience featuring salmon! This recipe is inspired by the unique taste of feta cheese, made from sheep’s and goat’s milk, which I first encountered in Australia. After indulging in it for nearly a year, I initially found the name alone could make me feel queasy. However, seeking new ingredients for my sandwiches, I decided to give it another try and incorporated it into this creation. This sandwich is a celebration of textures and flavors, combining the richness of salmon, the creaminess of avocado, and the salty tang of feta, all nestled between hearty slices of rye bread.
Ingredients- Salmon fillet, 160g
- Crumbled Feta cheese, 3 Tbsp
- Ripe Avocado, 1 whole
- Fresh Dill, 1 handful (approx. 1/4 cup)
- Ripe Tomato, 1 whole
- Basil Pesto, 2 Tbsp
- Extra Virgin Olive Oil, 1 Tbsp
- Salt, 1 pinch
- Black Pepper, 1 pinch
- Red Pepper Flakes, a pinch (optional)
- Rye Bread, 2 slices
Cooking Instructions
Step 1
Begin by thoroughly washing the tomato. Remove the stem and then carefully slice it into thin, even rounds, about 0.5 cm thick. These vibrant slices will add freshness and a touch of acidity to your sandwich.

Next, prepare the avocado. Cut the ripe avocado in half, remove the pit, and peel it. Slice it into rounds of a similar thickness to the tomato, about 0.5 cm. The creamy avocado will provide a luxurious texture and a rich, buttery flavor.

Take your two slices of rye bread. Generously spread the basil pesto evenly over one side of each slice. The aromatic pesto will infuse the bread with a delightful herby and savory base.
