Miso Fried Rice Ingredients :: Serves 2
  • 2 bowls cooked rice
  • 1 can tuna
  • 1/2 large green onion
  • 1/2 onion
  • 2 fried eggs (sunny-side up)
  • 2 Tbsp water

Seasoning Ingredients
  • 2 Tbsp miso paste
  • 1/2 Tbsp oyster sauce
  • 2 Tbsp oligo-syrup (or honey/corn syrup)
  • 1 Tbsp sesame oil
  • 1 Tbsp garlic powder (or 1/2 Tbsp minced garlic)

Cooking Instructions

Step 1

[Miso Fried Rice Ingredients :: Serves 2] [Basic Ingredients] * 2 bowls cooked rice
* 1 can tuna (150g)
* 1/2 large green onion
* 1/2 onion [Toppings] * 2 fried eggs (sunny-side up) [Other] * 2 Tbsp water [Seasoning Ingredients] * 2 Tbsp miso paste
* 1/2 Tbsp oyster sauce
* 2 Tbsp oligo-syrup (or honey/corn syrup)
* 1 Tbsp sesame oil
* 1 Tbsp garlic powder (or 1/2 Tbsp minced garlic)

Step 2

Peel and wash the half onion, then slice it thinly into strips.

Step 3

Cut the half green onion in half lengthwise, then finely chop it. You can use both the white and green parts.

Step 4

Heat a frying pan over high heat. Open the can of tuna and pour the oil from the can into the hot pan. This oil is a type of cooking oil and adds flavor.

Step 5

Add the sliced onion and chopped green onion to the hot oil. Stir-fry over high heat until the onions are translucent and slightly browned, and the green onions are fragrant. This process brings out their sweetness.

Step 6

Once the vegetables are nicely sautéed, reduce the heat to the lowest setting. Add the 2 tablespoons of miso paste to the pan.

Step 7

To prevent the miso from burning, add about 2-3 tablespoons of water. Stir-fry the miso and vegetables together over medium-low heat until the miso is well combined and fragrant, about 1-2 minutes.

Step 8

Push the miso and vegetable mixture to the side of the pan to prevent further cooking. Place the 2 bowls of cooked rice in the center of the pan. Keep the heat on low. Now, we’ll add all the seasoning ingredients.

Step 9

Add the drained 1 can (150g) of tuna to the rice.

Step 10

Add 1/2 tablespoon of oyster sauce for an extra layer of savory depth.

Step 11

Add 2 tablespoons of oligo-syrup for a touch of sweetness and shine.

Add 1 tablespoon of garlic powder (or 1/2 tablespoon of minced garlic) for aroma. Finally, drizzle in 1 tablespoon of sesame oil for a nutty finish.

Step 13

[Making the Perfect Sunny-Side Up Egg] Let’s make a sunny-side up egg that pairs wonderfully with fried rice.
① Lightly grease a pan with oil and heat over low heat. Carefully crack an egg into the pan.
② Once the egg white just begins to set, cover the pan with a lid and cook on very low heat for about 30 seconds. Then, turn off the heat completely and let the residual heat and steam cook the top of the egg white until it’s just set. If it seems undercooked, repeat the process of heating for 30 seconds and then turning off the heat until the egg white is cooked to your liking. 🙂
