- 1.5 Tbsp soy sauce
- 1 Tbsp olive oil

- 4-5 drops vinegar
- 10-20ml water

Cooking Instructions
Step 1
Wash the eggplant thoroughly and slice it into thick rounds, about 2 to 2.5 cm (approximately 1 inch) thick. These will be our ‘steaks’.
Step 2
Score the cut sides of the eggplant slices with shallow cuts, about halfway through the thickness. Be careful not to cut too deep, as this can cause the slices to separate during cooking.
Step 3
Lightly season the scored eggplant slices with salt on both sides. A pinch of salt sprinkled evenly over the surface will help draw out some moisture and season the eggplant beautifully.

Now, let’s prepare the delicious sauce that will perfectly complement our eggplant steaks. Finely mince the onion, green onion, red chili pepper, and green chili pepper. Finely chopped vegetables will add wonderful depth of flavor to the sauce.

Add 1 tablespoon of olive oil to the minced vegetables for richness. Then, add 0.5 tablespoon of sugar for a touch of sweetness and 4-5 drops of vinegar for a bright, acidic note. The olive oil really enhances the natural flavors of the eggplant.

Next, pour in 1.5 tablespoons of soy sauce and about 10-20ml of water. Stir everything together until well combined. Taste the sauce and adjust the seasoning if needed; if it’s too bland, add a little more salt (about 1/3 teaspoon should do). I found this amount to be just right.
