  • 2-3 Tbsp cooking oil

  • 1 Tbsp sugar
  • 1 Tbsp corn syrup (oligo-dang)
  • 2 Tbsp sesame oil
  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp minced garlic

Cooking Instructions

Prepare the eggplants by cutting each one into 2-3 segments, then halving them lengthwise. Next, use a knife to score the cut surface in a crosshatch pattern, like a diamond or honeycomb. This technique allows the sauce to penetrate deeply into the eggplant, making it much more flavorful. Be careful not to cut too deeply.

Now, let’s make the delicious sauce. In a small bowl, combine 1 Tbsp sugar, 1 Tbsp corn syrup, 2 Tbsp sesame oil, 2 Tbsp gochujang, and 1 Tbsp minced garlic. Stir everything together with a spoon until well combined, creating a glossy and flavorful sauce.

Heat a pan over medium heat and add 2-3 Tbsp of cooking oil. Place the scored eggplants cut-side down into the hot pan. Cook over medium-low heat to ensure the eggplant becomes tender on the inside without burning on the outside. Flip and cook until both sides are nicely golden brown.

Once the eggplants are golden brown, reduce the heat to low. Now, using a brush, lightly coat the scored surfaces and exterior of the eggplant with the prepared sauce. Apply the sauce multiple times as you continue to cook. Keep the heat on low to prevent the sauce from burning, flipping the eggplant occasionally to ensure the sauce caramelizes and creates a beautiful glaze. Aim for about 2-3 coats of sauce.
