Many people mistakenly believe that crab sticks are made from real crab meat, but they are actually made from fish paste, similar to fish cakes. While not real crab, they are called ‘crab sticks’ because they mimic the flavor of crab. I had some crab sticks at home, so today I decided to make a refreshing crab stick salad with crisp cucumber. It’s fantastic as a beer snack or as a delicious filling for sandwiches.

  • 5 Tbsp mustard
  • 2 Tbsp whole grain mustard (optional)
  • 1 Tbsp sugar
  • Pinch of black pepper

First, wash the cucumber thoroughly. If you prefer a firmer texture, you can thinly slice the cucumber, lightly salt it, and then squeeze out the excess water. However, to maintain its crispness, I chose not to salt it. Instead, I cut the cucumber in half and scooped out the watery seeds before slicing. Feel free to choose the method that best suits your preference.

Once the seeds are removed, thinly slice the cucumber. Slicing it thinly ensures a pleasant bite when mixed into the salad.

Finely mince the onion to reduce its sharpness and enhance its savory flavor. The finer the mince, the better it will incorporate into the salad.

Bell peppers add color and flavor, but you can omit them if you don’t have any. If you have some leftover, mince them finely as I did. Using bell peppers of various colors like red and yellow will make your salad look even more appealing.

Place all the prepared vegetables – cucumber, onion, and bell pepper – into a large bowl.

Gently shred the crab sticks along their natural grain. Avoid shredding them too finely, as some texture is desirable. Aim for pieces that still offer a satisfying chew.

Now, let’s make the dressing. Add a generous 15 tablespoons of mayonnaise to the bowl. If you love mayonnaise, feel free to add a bit more for an even richer flavor. I personally enjoy a generous amount of mayonnaise.

Add 5 tablespoons of mustard and 2 tablespoons of whole grain mustard for added depth of flavor. Whole grain mustard provides a distinct piquant taste and texture, but you can substitute it with regular mustard or omit it if unavailable.
