Thaw the frozen green beans by soaking them in cold or lukewarm water. After thawing, rinse them once under clean water and squeeze out any excess moisture thoroughly. This prevents the fried rice from becoming watery.

Let’s prepare the vegetables! Dice the carrot into 1cm cubes. Slice the onion into 0.5cm thick strips. For the enoki mushrooms, trim off about 5cm from the base and then separate the strands with your fingers. Gently shred the imitation crab sticks lengthwise according to their natural grain. It’s a good idea to set aside a small portion of the shredded crab for topping later, for a prettier presentation.

Now, let’s start stir-frying. Melt 2 tablespoons of butter in a frying pan over medium heat. The butter will add a wonderful richness and flavor.

Once the butter is melted, add the minced garlic and stir-fry for about 1 minute until fragrant. Then, add the diced carrots and cook until they begin to turn translucent, about halfway done, over medium heat. Next, add the sliced onions and stir-fry until they become partially transparent. Finally, add the imitation crab, green beans, and enoki mushrooms, and stir briefly to combine everything.

Quickly toss everything together to mix. Ensure the crispness of the vegetables and the tenderness of the crab sticks are well combined.

Time to add the flavor! Pour in 2 tablespoons of oyster sauce and 3 tablespoons of soy sauce. Stir-fry with the ingredients for about 30 seconds to season them. Make sure the sauce coats everything evenly. Turn off the heat temporarily after this step.

Now it’s time to add the star of fried rice: the rice! If using instant rice, add it directly without preheating. Don’t worry, fried rice is delicious even with cold rice! Gently mix the rice with the stir-fried vegetables and crab using a spatula.

Stir-fry over medium heat for about 1 minute until the rice grains become fluffy. Then, reduce the heat to low, spread the rice evenly in the pan, and let it sit for 2 minutes to develop a slight crispness at the bottom. Repeat this process 3-4 times.
