I purchased three plump and healthy flatfish from the coast, a real treat! I’ve saved two for later, but today we’re turning three of them into a delicious braised dish. This flatfish is so meaty and flavorful, it’s guaranteed to be a hit. Even though it’s not a special occasion, making this braised flatfish with fresh ingredients is a wonderful way to create a memorable meal for the whole family.

Main Ingredients

  • 3 medium-sized flatfish
  • 3 Korean green chilies (or other mild chili peppers)
  • 1/2 large green onion

Seasoning Ingredients

  • 9 Tbsp soy sauce
  • 20 Tbsp water
  • 2 Tbsp minced garlic
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp sugar
  • 2 Tbsp mirin (rice wine)
  • A little cooking oil
  • 2 Tbsp oyster sauce

First, gently rinse the flatfish under running water. Finely chop the green onion into bite-sized pieces and thinly slice the green chilies diagonally. Mince the garlic finely, as this helps the marinade penetrate better.

The key to delicious braised flatfish is the sauce! In a bowl, combine the soy sauce, water, minced garlic, gochugaru, sugar, mirin, and oyster sauce. Mix them well. Add the chopped green onion and sliced green chilies, and stir again until everything is evenly combined. Your flavorful sauce is now ready.

Lightly grease the bottom of a deep pot with a little cooking oil. Arrange the prepared flatfish neatly in the pot. Using a spoon, evenly spread the prepared sauce over the surface of each flatfish. Ensuring the sauce coats the fish well will help it absorb the flavors properly.

Now it’s time to braise the flatfish to perfection. Place the pot over low heat and let the fish cook slowly, making sure it doesn’t burn. Once the sauce has reduced to a nice glaze and coated the fish beautifully, turn off the heat. Serve and enjoy this incredibly satisfying dish that will surely make you crave another bowl of rice!
