Main Ingredients for Braised Eggs & Tofu
  • 10 fresh eggs
  • 1 block of firm tofu (approx. 300-400g)

Golden Ratio Sauce
  • 1 medium onion, finely chopped
  • 1 stalk of green onion
  • 1 red chili pepper (optional, for spice)
  • 1 cup (approx. 200ml) soy sauce
  • 1 cup (approx. 200ml) water
  • 5 Tbsp (approx. 90g) corn syrup or rice syrup
  • 1 Tbsp sugar
  • 1 Tbsp sesame oil
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

First, let’s prepare the star of our dish: the sauce. We’ll use a 1:1 ratio of soy sauce and water, so measure out approximately 200ml of each. If you don’t have a scale, using a standard cup for measurement will work perfectly fine for a delicious sauce.

Step 2

For a touch of sweetness, add 5 tablespoons (about 90g) of corn syrup or rice syrup. We’ll add 1 tablespoon of sesame oil now. It’s a good tip to save the remaining sesame oil and add a little bit just before serving to enjoy its fresh aroma.

Step 3

Now for the aromatics! Finely chop 1 medium onion, 1 stalk of green onion, and 1 red chili pepper (if you like a little heat). (Note: The original recipe mentions 2 onions, but using 2 will provide a richer flavor). Combine all these chopped ingredients with 1 tablespoon of sugar and 1 tablespoon of sesame seeds. Mix everything well, and your wonderfully flavorful sauce is complete!

Step 4

Let’s prepare the main ingredients. Boil the eggs in water for about 7 minutes until hard-boiled, then carefully peel them. For the tofu, using a firm block is best. Before frying, pat it dry thoroughly with paper towels – this is crucial for allowing the sauce to penetrate better. Lightly pan-fry the tofu pieces until golden brown.

Step 5

Now, it’s time to bring everything together! In a pot or deep pan, pour in the prepared sauce. Arrange the boiled eggs and fried tofu pieces in the sauce. Simmer over medium-low heat for about 15-20 minutes, or until the sauce has slightly thickened and coats the ingredients beautifully. While you can eat it right away, letting it sit at room temperature for about 30 minutes will allow the flavors to meld even further. If you plan to eat it within 2-3 days, storing the tofu and eggs together is fine. However, for longer storage, it’s recommended to keep the tofu and eggs separate as tofu can spoil more quickly. Boiling the sauce once and then cooling it before storage will help preserve its flavor for longer.
