Pork Neck Steak Main Ingredients
  • 4 slices of pork neck (about 1.5-2cm thick)
  • 10 whole garlic cloves (or sliced garlic)
  • 2-3 Tbsp all-purpose flour (for dusting)
  • 1-2 Tbsp butter
  • 2 eggs (for serving)

Pork Neck Seasoning
  • Pinch of salt
  • Pinch of black pepper (freshly ground pepper is recommended)

Special Steak Sauce
  • 4 Tbsp ketchup (approx. 60g)
  • 2 Tbsp sugar (approx. 25g)
  • 2 Tbsp soy sauce (approx. 30ml)
  • 2 Tbsp vinegar (approx. 30ml, apple cider vinegar recommended)
  • 100ml water

Cooking Instructions

Step 1

First, prepare 4 slices of pork neck. Season both sides generously with salt and pepper. Lightly pound the meat with the back of a knife or a meat tenderizer to help the seasoning penetrate and to tenderize the meat. (This recipe makes 4 servings.)

Step 2

Make several shallow cuts across the surface of the seasoned pork neck. Scoring the meat helps prevent it from shrinking as it cooks and allows the sauce to penetrate better, resulting in a more flavorful steak.

Step 3

Lightly coat both sides of the pork neck with all-purpose flour. This flour coating will help the surface brown beautifully and seal in the juices, keeping the steak moist and tender. Shake off any excess flour.

Step 4

Heat a generous amount of cooking oil in a pan over low heat. Add the seasoned pork neck and whole garlic cloves (or sliced garlic) to the pan. Cook slowly over low heat to ensure the meat cooks through without burning. Roasting the garlic alongside the steak adds a sweet flavor. (Tip: Feel free to add more garlic if you love it!)

Step 5

When you see a little bit of juice rising on one side of the pork neck, it’s time to flip it. Be careful not to overcook, as this can lead to lost juices. Flip the meat when the surface starts to turn golden brown.

Step 6

Remove the nicely browned garlic cloves from the pan and set them aside. Carefully blot out any excess oil from the pan with a paper towel. Turn the heat up to medium and add a knob of butter. Let it melt.

Step 7

Once the butter has melted, return the pork neck to the pan. Increase the heat to medium-high and sear both sides until nicely browned and caramelized. Cooking quickly over high heat helps to lock in the juices. Once the steak reaches your desired doneness, remove it from the pan and set it aside temporarily.

Step 8

In the same pan where the steak was cooked, add all the sauce ingredients (4 Tbsp ketchup, 2 Tbsp sugar, 2 Tbsp soy sauce, 2 Tbsp vinegar). Stir over medium-high heat for about 1 minute until the sharp, vinegary aroma dissipates. Pour in 100ml of water and bring to a simmer. Cook until the sauce thickens slightly, then return the pork neck and garlic to the pan. Simmer over medium-low heat for another 1-2 minutes, allowing the sauce to coat the meat beautifully.
