Flavorful Bacon Kimchi Stew Recipe
A Rich and Delicious Bacon Kimchi Stew, Simmered to Perfection
I recently purchased some ‘paji’ bacon, which is a more economical cut! You can get 1kg for a great price, around 8,000 won, and it’s so versatile for many dishes! This recipe transforms it into a wonderfully savory and comforting kimchi stew.
Main Ingredients- 1/4 head of aged or well-fermented kimchi
- 200g bacon
- 1/2 onion
Seasoning- 1 Tbsp minced garlic
- 1 Tbsp soup soy sauce (or regular soy sauce)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sugar

Cooking Instructions
Step 1
Chop the kimchi into bite-sized pieces, about 2-3cm wide. Try not to remove too much of the internal kimchi paste for extra flavor. Cut the bacon into similar sized pieces so they cook evenly and offer a satisfying chew. Slice the onion thinly.
Step 2
In a pot with some depth, combine the chopped kimchi and bacon. Add enough water to generously cover both the kimchi and bacon. (Adjust the water amount based on the saltiness of your kimchi. If you prefer a thicker stew, use slightly less water.)
Step 3
Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low. Add the sliced onion and all the seasoning ingredients (minced garlic, soup soy sauce, gochugaru, and sugar) to the pot. Stir everything together well. Cover the pot and let it simmer for about 15 minutes. This allows the flavors to meld beautifully, creating a deep and delicious bacon kimchi stew. For an extra kick of spice, consider adding a chopped cheongyang pepper!
