Main Ingredients

  • Prime Bacon 1 piece (approx. 100-150g)
  • Eggplant 2-3 (medium size)
  • Onion 1 (medium size)
  • Green Onion 1/2 (white part mainly)
  • Red Chili Pepper 1 (for garnish and aroma)
  • Minced Garlic 1/2 Tbsp
  • Sugar 1 Tbsp
  • Soy Sauce 2 Tbsp
  • Oyster Sauce 1 Tbsp
  • Sesame Oil (a drizzle)
  • Sesame Seeds (a sprinkle)

Cooking Instructions

Step 1

First, wash the eggplants thoroughly and trim off the ends. Cut them into three equal pieces, then slice each piece lengthwise into about 0.7cm thick pieces. Slicing them on an angle will give them a nice shape.

Peel and slice the onion into thin strips. Try to match the thickness of the eggplant slices for even cooking.

Slice the green onion diagonally, focusing on the white part. The onion’s fragrance will enhance the flavors of the bacon and eggplant.

Remove the seeds from the red chili pepper and slice it thinly. This adds a touch of color and a hint of spice, elevating the dish’s overall flavor. (Omit or adjust the amount if you prefer less heat.)

Heat a frying pan over medium-low heat with a little cooking oil. Add the sliced onions and green onions first, and stir-fry until fragrant. Cook until the onions become translucent and the green onions release a pleasant aroma.

Once the onions and green onions are somewhat cooked, add the prime bacon (cut into bite-sized pieces, about 2-3cm) and the sliced eggplants to the pan. Continue to stir-fry together. The bacon fat will render and help cook the eggplant naturally.

As the eggplant begins to soften, add the minced garlic (1/2 Tbsp), sugar (1 Tbsp), soy sauce (2 Tbsp), oyster sauce (1 Tbsp), and the sliced red chili pepper. Increase the heat to high and stir-fry quickly to ensure the sauce evenly coats all the ingredients. Be careful not to burn the sauce.

Finally, just before turning off the heat, drizzle in the sesame oil (1 Tbsp) and sprinkle with sesame seeds (1 Tbsp). Give it a final toss. Your delicious Bacon Eggplant Stir-Fry is complete, with an enhanced nutty aroma! Serve it warm over rice for a delightful meal.
