My husband’s favorite winter delicacy is warm oyster soup made with fresh oysters! The oysters, plump and in season, are full of the ocean’s aroma, making the soup exceptionally delicious. The clear, refreshing broth, combined with soft tofu and crisp radish, creates a satisfying meal that leaves you feeling full and refreshed. I was amazed by its taste after making it myself! Here’s a simple yet profoundly flavorful oyster soup recipe. It’s perfect for a light breakfast and packed with nutrients. Enjoy a delicious winter with this oyster soup!

Main Ingredients

  • 500g fresh oysters (1 pack)
  • 1/3 Korean radish (daikon)
  • 1/2 block firm tofu
  • 1/2 stalk green onion
  • 1 Korean chili pepper (optional)
  • 1 Tbsp sesame oil

Refreshing Broth Ingredients

  • 6 cups water (approx. 1.2L)
  • 5 dried anchovies (for broth)
  • 2 pieces dried kelp (approx. 10x10cm)
  • 0.5 Tbsp minced garlic
  • Salt or Korean soy sauce to taste

These winter oysters are plump and have a wonderful texture, packed with the fresh scent of the sea, making the soup incredibly refreshing and clean-tasting. This recipe will highlight the oysters’ deep, natural flavors.

Prepare the fresh oysters. Add 0.5 Tbsp of coarse salt and gently wash the oysters. It’s crucial to handle them delicately to avoid breaking their shape, gently rubbing them to remove any impurities.

The rinsing process determines the oysters’ freshness! Rinse the oysters in cold water about 3 times until they are thoroughly clean. This step will make the oysters plump and appear a clean, milky white.

Let’s start by making a refreshing broth for delicious oyster soup. Pour 6 cups of water into a pot, add the kelp and anchovies, and bring it to a boil. While the broth is simmering, prepare the other ingredients.

Shall we get the other ingredients ready? Slice the washed radish thinly. Cut the tofu into bite-sized cubes, and slice the green onion diagonally.

Once the broth begins to boil, add the sliced radish first and simmer over medium heat for about 3-5 minutes until the radish becomes tender. Cooking the radish until it turns translucent will enhance the soup’s refreshing flavor.

When the radish is cooked enough, add the tofu and the rinsed oysters. Add 0.5 Tbsp of minced garlic, and season with Korean soy sauce or salt to your preference. Oysters can become tough if overcooked, so add them and boil briefly over high heat.

Finally, add the diagonally sliced green onions. If you prefer a spicier soup, finely chop and add a Korean chili pepper, just like I did. This will make the soup taste even cleaner and more refreshing.
