Lately, I’ve been doing a lot of frying at home, and I have quite a bit of leftover frying oil. Instead of discarding it, I decided to make chili seed oil, which I’ve been sharing and using in various dishes. It tastes much cleaner and more refined than store-bought versions, and honestly, anything cooked with it turns out delicious! This time, I used my homemade chili seed oil to make egg fried rice, and it was a revelation! The flavor was incredibly well-balanced and satisfying – it felt like I had created my ultimate ‘life-changing’ fried rice. It’s so wonderfully tasty! This fried rice is a simple, one-pan meal perfect for a quick lunch or even a delightful office bento box. Enjoy this delicious, spicy egg fried rice!

  • 4 large fresh eggs
  • 3 bowls of warm cooked rice

Seasoning & Aromatics
  • 3 Tbsp chili seed oil (homemade recommended)
  • 2 Tbsp tuna extract (for umami)
  • Salt, to taste
  • Chopped green onions (scallions)
  • A sprinkle of toasted sesame seeds

Cooking Instructions

Step 1

Heat a deep pan or wok over medium heat and add a generous amount of oil. While any cooking oil works, using chili seed oil will impart a richer flavor.

Step 2

Crack the 4 eggs into a bowl. Gently whisk them with a fork, breaking up any stringy bits. You can add a pinch of salt for seasoning.

Step 3

Add the 3 bowls of warm cooked rice to the pan. If the rice is clumped together, gently break it apart with a spatula to ensure it’s fluffy.

Step 4

Increase the heat to high and stir-fry the rice quickly until you hear it crackling. This helps each grain of rice get coated in oil, making it more flavorful.

Step 5

Once the rice is sufficiently stir-fried, add the prepared seasonings in order. First, add the tuna extract (2 Tbsp) and stir-fry. Then, drizzle in the chili seed oil (3 Tbsp). Finally, season with salt to your preference and add the chopped green onions for aroma.

Step 6

When all ingredients are well combined and the rice is fluffy and perfectly fried, turn off the heat. Sprinkle with toasted sesame seeds for an extra nutty flavor. Serve hot in a bowl. Your delicious egg fried rice is ready!
